Highlights from our Farm Dinner in collaboration with @beitychicago for a family style 5-course meal put together by @chefryanfakih and @eatgyptianchef . 🌿🧆🍴
These amazing courses and tea by @volitionteaco were served on locally and hand-made ceramics by @monsoonpottery 🍵✨
So grateful for everyone who came and the people behind it who made it all possible! 🙌🏼
We stopped by @fancycocktailbar and spent some time with @bryanthecook , who showed off a couple of their dishes that feature our microgreens!
Chef Bryan showed us how he puts together their Harissa Honey Chicken and Couscous dish, where our micro mix adds freshness and balance alongside tender chicken, couscous, crispy chicken skin crackers, and yogurt.
He also walked us through their Bitter Greens Salad, where our red kale and scarlet frills mustard microgreens provide spice, texture, and color to the greens blend. The salad is finished with Sarvecchio cheese, crispy shallots, and candied walnuts.
With thoughtful, easygoing and delicious bar food, Best Intentions is a fan favourite and it’s a place we’ll definitely be coming back to in the future!
Amongst many other less savory adjectives, 2025 was so delicious. We are beyond grateful and proud to work with so many talented chefs and incredible restaurants. It feels appropriate to show off some of our favorite plates from throughout the year. It is our honor to help make Chicago a more delicious city.

We started planting in our outdoor farm in early April and we are so excited to share our first harvest of lettuce this season 🌱🥬
Shoutout to @mirrachicago and @marielachicago for being our very first customer of gem lettuce this year ✨
The first harvests are in limited supply coming out of the hoop house. Then in a couple of weeks our production will increase as the plantings outside of the hoop house reach maturity.
We are excited for a big scaling up of our beautiful gem lettuces this season! 🥬
@_adam_pollack_ stopped at @yokochochicago , an intimate omakase bar, and met up with long-time supporter of our farm, Chef Mariano (@el_nanban )
Mariano walked us through a few of yokocho's dishes that highlight our products, bringing fresh vibrant flavors that pair beautifully with their pristine fish:
- Grilled wagyu with crispy rice, runny quail egg and sauteed pea tendrils 🥩
- Boquerones on toast, topped with micro garlic chive which brings a sharp onion flavor to balance the rich oily fish. 🐟
- Raw Hokaido scallops finished with micro shiso. The earthy and aromatic flavors of the shiso beautifully complement the sweet scallops. 🌿

Automated Irrigation System: Behind the Greens 🌱
In this video, Kenny walks us through our automated irrigation system that helps save nearly 2 hours of labor each day by handling the watering of our microgreen trays. The system can be controlled with simple buttons, timed schedules, and adjustable water flow to make sure each tray gets what it needs.
With this setup, we’re able to water all 4 levels in about 2 minutes, making the process far more efficient in both time and labor.
Our goal is to continue building toward a fully automated watering system across the entire indoor farm, helping our team focus on higher value work while keeping the farm productive and sustainable.
