We’ve sourced locally where we could. It started practically — fresh is fresh, and Bangkok’s markets don’t disappoint.
But somewhere along the way, the ingredients stopped being just ingredients. The banana leaves, fresh cheese from Chiang Mai, seafood from Trat — they kept showing up with something to say. So we listened.

Bright, clean, and straight to the point. Our Seabream Aguachile is made with sea bream from Lanta Plathai fishermen, watermelon aguachile, chamomile salt, finger lime, and kaffir lime zest. Fresh, sharp, and the kind of acidity that wakes everything up.
