SHOWCOLAT is far more than a festival — it’s a community collectively shaping and growing an industry, and it was a joy and honor to attend and meet so many passionate and dedicated bean to bar chocolate makers.
It’s always wonderful to see colleagues and friends at festivals but this was a little different, I can’t describe the amount of warmth and true connection that was present the entire 3 days.
Collaboration above competition. That was the key.
A huge thank you and enormous respect to @vincentferreirabdx33 and Rosario @thecacauclub for putting this together with so much vision. @festivalshowcolat was an exceptional event and I hope I can be there again 2027!
Tea and chocolate pairing? Yes please! @newyorkteasociety partnered up with chocolate sommelier @chocomotions to curate 4 tea and chocolate pairings!!
This was a TON of fun, and a wonderful tea + food pairing. I’ve never done anything quite like this before, and it is such a brilliant idea. I would highly recommend this, an can’t wait to try other tea + chocolate pairings!

In the middle of all that is happening in this country — things that are hard to comprehend and make chocolate work sometimes feel almost frivolous— I gotta say that I’m glad to be back with my friends at Inspīr Senior Living for a new tasting series. I missed the rhythm of these visits that make the world feel nicer for an hour. Recurring tastings build real connections and our conversations picked up right where we left off.
Highlight of this session: @canopy_bridge macambo beans coated in chocolate 🍫🌱Not easy to surprise these well travelled seniors with new flavors…but this was a unanimous favorite discovery. 😋

The highlight of last Fall, just before the Salon du Chocolat, was a stop at one of the most beautiful #villagedefrance Najac, to visit Benjamin Bazoge @chocolateriedunouveaumonde and service some of his machines with Bhavani @chocolate_melangers .This will stay as one of my most memorable chocolate experiences in Europe ever! Benjamin roasts his beans on Sunday night when the village baker rests and lets him use his oven, in the middle of the forest ( we were there late in the night surrounded by singing cicadas and a sky full of stars ). I can still smell roasted cacao blending with the forest!
Benjamin makes delicious single origin bars and praliné slabs + beautiful boxes of chocolates that I tried to make last as long as I could - some of the best praliné I’ve ever had, not too sweet, textured, all sweetened with a touch of panela and using the best nuts and seeds possible.
The team at the chocolaterie was so welcoming, they even surprised us by filming an episode for the radio bean to bar France!
We discovered chocolate friends with a formidable drive and energy that is for sure moving cacao mountains!

Advent adventures are underway! 🐄 Kicking off with the delightfully named 'Oh la vache!' (hands down the best milk chocolate name ever!) It may have crossed the Atlantic twice, but for @qantu_chocolat 's first advent calendar, I'd have flown anywhere! 😜 It was fun catching up at the Salon du chocolat this year. I was lucky to get one of the few available there.

I started this month trip in Glasgow and visited Cameron and Lara @bareboneschocolate . Cameron was so kind to let my friends and I in the factory and show us around.
The other location (super close) is the beautiful store and cafe where you can pick your hot chocolate origin. It’s great to see bare bones chocolate in other cafes and restaurants too but theirs is the best one! Thank you guys for a great visit. You’re doing amazing work!
