This week on Yes, Chef! we go inside @chishuru in Fitzrovia, central London to see first hand what it takes to make Michelin-level West African cooking.
Chef Joké gives us an exclusive peak into her cooking space and along the way shows us elite spice blends, strong kitchen opinions and who her dream celebrity to cook for is 👀
QV & Friends: @nick_bramham & @jokebakare
Saturday 13th June, 7pm
In 2022, we invited Joké Bakare and Nick Bramham, two of the city’s most exciting chefs, to each cook a dinner at ours. A mutual admiration followed and two Farringdon pop-ups later, they’d proved an essential London pairing.
Much has changed since their QV debut. Joké now holds a Michelin star at @chishuru and is responsible for a generation of diners who know their uda from their uziza.
At @qualitywinesfarringdon , meanwhile, Nick has single-handedly made set lunches sexy, applying a perfectionist’s lens to the simple things, including sandwiches that quite frankly do not need to go that hard.
On Saturday 13th June, Nick and Joké return to the stoves in our ‘Legends’ slot to cook a menu indicative of their intuitively inventive cooking.
Tickets, including four courses and a welcome drink, are £85 and can be purchased at the link in our bio.
Wine, as ever, is available separately by the glass, bottle or, occasionally, magnum
Treats to end our dinner menu... Mango, passion fruit & Scotch bonnet chilli jellies, and bonbons made with dark chocolate & baobab, and studded with buckwheat.
BiBi & Friends: We’re delighted to announce that the next collaboration in our series will be with Adejoké Bakare from Michelin-starred Chishuru.
Chet will welcome Joké and her team to BiBi on the 23rd of May, for a culinary experience like no other celebrating their common dedication to craft and culture. For one night only, a carefully curated menu, based on finding common yet distinct flavours, will bring together their love of heritage-inspired recipes and heartfelt hospitality.
Tickets are available via the BiBi website (link in bio).
One of the starters from our dinner menu, móínmóín - a steamed black eyed bean cake topped with cured Irish brown trout, with a short grain rice sauce, confit egg yolk, house-made shitto and toasted lentils.
Last month we had a little glow-up at the restaurant: new tables (with Nsibidi inscriptions in each one), larger tables, more space, new fabrics, new lighting and a couple more decorative features. We can now configure the ground floor into a single table seating 18 - this can be booked directly through the website under the 'exclusive hire' tab on our Reservations page. Finally we put some lovely fabrics on the walls of our downstairs alcove table to make it feel more cosy, and added a screen for a bit more privacy.
Did you know that @jokebakare is the first black female chef in the world to be awarded a Michelin star for her own restaurant @chishuru ? The restaurant in Fitzrovia serves west African flavours with a fresh twist, such as this ekuru dish made with black eyed peas and served with a vibrant pumpkin seed pesto, hibiscus and scotch bonnet sauce.
Come back next week to find out where @jokebakare recommends for impressing someone from out of town... where would you suggest?
Last night's collab dinner with @chefjanostle of @wilsonsbristol was so much fun, using produce from Wilsons farm and the bakery. The team's favourite dish was probably the scallop with onion & bombini broth, uda oil and egusi pesto, but there were too many to count.

There's a lovely nine page feature in the latest edition of @ft_weekend , with Joké's recipes for a feast for four - all photographed at her flat. Yes she does have that many cookbooks, and that's not even all of them.
A banging banga rice from Adejoké 😍 With a spicy green seasoning, and topped with lobster as a special treat 🦞 You can find her full recipe on the BBC Food website! 🫑 @chishuru #SaturdayKitchen
