Took a break from Wine and Dine 2025 to host a dinner with the culinary leaders of 10 of our @marriottbonvoy Hotels in Hong Kong. Big shout out to all the chefs, leaders, and service support from our multiple Sheraton, Marriott and Courtyard hotels, as well as the Park Lane, le Meridien, and of course my team at @renhongkong Lots of sacrifice from the chefs with last minute tastings and changes, but everyone did it with a smile (although Iโ€™m sure they were cursing me under their breath). Weโ€™re incredibly lucky to have so many supportive culinary leaders who care more about the execution and helping eachother out than their own egos. Thatโ€™s a rarity in this industry. Good food, good show. On to the next.

To describe this in one word: Sinful. Working on a new project in the kitchens: Savoury Basque Cheesecake with Oscietra Caviar. Soft center mimicking a delicious soft cheese, briny saltiness from the Caviar with the natural sweetness of the cheese. Decadent to the point I feel dirty eating it... In the best way.

HK Wine & Dine 2024 x Marriott Bonvoy. Organizing yet another cluster event with all the Marriott chefs. Appreciate the support from all of the properties and F&B leaders who helped set this up especially Roger and Charles! It's going to be a long weekend!
