A $12 ribeye from one of the better chefs in SD? Sounds mythological, but such deals do exist—if you know where to look. Jeff Rossman was one of the first chefs to cook farm to table with his restaurant, @terrasd , which he opened in 1998 with his dad, who ran Pam Pam in Mission Valley. Last year, so much catering business rolled in that he converted his College Area restaurant into a catering hub. One major catering secret: the “overrun.” A caterer makes 15–20 percent more food than they think will be needed. Nothing worse than running out of food at a wedding. Usually, the unused overrun goes to staff or is donated—both of which Rossman does. But now he’s started “Zero Waste Gourmet,” selling those dishes at his restaurant the next day for ridiculously low prices. Say, a ribeye in bordelaise with smashed potatoes and glazed local carrots for less than $15. Rossman makes his food costs back, and those in the know get a screaming deal. Rossman visits Happy Half Hour to share the ins and outs of the catering world, and we name our favorite farm-to-table restaurants right now, from Nine-Ten to Callie to Market.
