Kofta with Tahini Rosé Juicy lamb kofta layered over tender potatoes and baked in a silky tahini-tomato sauce, infused with Aleppo pepper, warm spices, and a hint of pink peppercorn by @chefhalawa A comforting, flavor-packed dish that feels both traditional and elevated, perfect for gathering around the table. Serves 6 Ingredients Kofta • 1 kg lamb mince • 1 cup breadcrumbs • 1 cup grated onion, well strained • 1 cup chopped parsley • 1 cup pistachios • 3 tsp crushed garlic (divided) Spices • 2 tbsp Aleppo pepper • 1 tsp ground peppercorns • 1 tsp 7 spice • ½ tsp cinnamon • 1 tbsp coriander • 1 tbsp salt • 1 tsp pink peppercorns Tray & Tahini Rosé Sauce • 3 potatoes, sliced • 3 tomatoes • 1½ cups tahini • 1 cup lemon juice • 3 cups water Method Mix lamb with breadcrumbs, onion, parsley, pistachios, 2 tsp garlic, and all spices. Shape into kofta. Lightly sear until golden (they’ll finish cooking in the oven). Layer sliced potatoes in a tray and place kofta on top. Blend tahini, tomatoes, lemon juice, water, remaining garlic, and salt until smooth. Pour over the tray, cover tightly, and bake at 180°C for 45 minutes. Serve over vermicelli rice. Sahtain 🤍 كفتة بصلصة الطحينة الوردية طبق غني ومليء بالنكهات، يجمع بين كفتة اللحم المتبّلة والفستق وصلصة الطحينة بالطماطم والليمون، مثالي للعزائم ولمّة العائلة. تكفي لـ6 أشخاص المكونات الكفتة • 1 كلغ لحم غنم مفروم • 1 كوب بقسماط • 1 كوب بصل مبشور ومصفّى • 1 كوب بقدونس مفروم • 1 كوب فستق • 3 ملاعق صغيرة ثوم مهروس التوابل • 2 ملعقة كبيرة فلفل حلبي • 1 ملعقة صغيرة فلفل أسود • 1 ملعقة صغيرة سبع بهارات • ½ ملعقة صغيرة قرفة • 1 ملعقة كبيرة كزبرة • 1 ملعقة كبيرة ملح • 1 ملعقة صغيرة فلفل وردي الصينية والصلصة • 3 بطاطا شرائح • 3 طماطم • 1½ كوب طحينة • 1 كوب عصير ليمون • 3 أكواب ماء الطريقة المختصرة اخلطي مكونات الكفتة مع التوابل وشكّليها، ثم حمّريها قليلاً. رصّي البطاطا في صينية وضعي الكفتة فوقها. اخلطي الطحينة مع الطماطم، الليمون، الماء والثوم، اسكبيها فوق الصينية وغطّيها. اخبزي على 180° لمدة 45 دقيقة. تُقدّم مع أرز بالشعيرية. صحتين 🤍 #ramadan #ramadanrecipes
