Chef Frances, born and raised in Manila not only had big dreams for herself but to be able to have something Filipinos could all be proud of. Tadhana is a reflection of 18 regions and 7,641 islands - Faithful filipino flavors in a 13-course contemporary tasting menu. Being part of September 2024's Michelin guide was big for our whole team who all worked so hard and passionately since we opened early this year. 23 years after making a name for herself in kitchens across the world, Chef #FrancesTariga (@cheffrances ) is back in the Philippines with the opening of her newest restaurant, and it’s an endeavor that’s close to her heart. Located at the Levanto Building along Jupiter Street, Makati, #TadhanaMakati (@tadhana_makati ) offers guests a 10-course tasting menu featuring 16 small bites that showcase the potential of Filipino food. It is a modernist approach that marries premium proteins with the country’s endemic ingredients, all while preserving faithful Filipino flavor and elevating them through contemporary technique, design, and service. Chef Frances describes it as her spin on classic middle-class Filipino meals and snacks, taking her cherished childhood and local favorites and presenting them with thoughtful and intentional presentation. The results are bites and plates featuring well-known local delicacies and flavors, but with a more refined presentation. It was once written that life can only be understood backwards, but it must be lived forwards: it’s a sentiment that permeates @tadhana_makati , the latest tasting menu concept by @cheffrances opening at @levanto.ph on May 15. Named after the Filipino word for ”fate,” the restaurant traces Chef Frances’ journey across kitchens around the world as she sharpened her techniques, and the Filipino flavors she kept returning to. And yet, Tadhana never feels trapped in nostalgia. “This restaurant isn’t about looking back,” Chef Frances says. “It’s about showing where Filipino food can go next.” This tension defines the experience.
