Mom,
I donāt think I tell you enough how much I admire you.
Not only because you are my mother, but because of the woman you are.
You have lived through so much. So many challenges, sacrifices, heartbreaks, responsibilities, and moments where life could have made you hard⦠but somehow, you never lost your heart. And to me, that is your greatest strength.
You carry a love so deep and unconditional that even when you were tired, worried, or carrying your own pain, you still found ways to give to others. You kept going. You kept loving. You kept holding people together even when you yourself needed someone to hold you.
I see your strength in everything.
In the way you survived difficult times.
In the way you protected the people you love.
In the way you kept moving forward no matter how heavy life became.
A lot of people may never fully understand everything you have endured, but I do see it. And I hope you know how proud I am to be your daughter.
You taught me resilience without even realizing it.
You taught me compassion.
You taught me how to stand back up after life knocks you down.
You taught me that having a soft heart is not weakness ā itās courage.
And despite everything life has put in your path, you still have one of the biggest hearts I know. You still care deeply. You still give love freely. That is something beautiful about you that no hardship could ever take away.
I want you to know that having you in my life is not something I take for granted. I choose you with love, with gratitude, and with deep admiration for everything you are and everything youāve overcome.
You are strong.
You are loving.
You are resilient.
And you are deeply important to me.

Ingredients:
1 pc. Avocados From Mexico
1 pkg. Tia Rosa White Flour Tortillas
1 Medium chicken breast cooked and shredded
½ Medium size Spanish onions sliced in julienne
½ Cup of corn kernels
2 Large Poblano peppers - roasted, peeled and sliced
¾ Cup of 35% cream
45 gr. unsalted butter
¼ Cup of queso fresco cut in cubes to garnish
Salt to taste
Instructions:
Char Poblano pepper on stove at high-heat until black.
Place peppers in a sealed container to allow them to sweat for about 10 min, then removed char skin and slice.
Sweat off the onions in butter, until translucid.
Add Poblano peppers and continue to cook for two minutes.
Add corn and cook for another two minutes.
Add cream and let it simmer for 2-3 minutes.
Add shredded chicken right after cream, and let it simmer for 2-3 min.
Season with salt.
Place Rajas Poblanas on a plate, sprinkle some queso fresco, cut avocado in small cubes and garnish on top. Enjoy with piping hot Tia Rosa Tortillas and buen provecho!
