Corrochio’s Tostada Madre is a celebration of Mexican ingredients done properly. Huitlacoche cooked low and slow with garlic, hoja santa, avocado leaf and black beans, blended into a rich base and layered onto a crisp corn tostada with Oaxacan cheese, salsa martajada, gualsa and grasshopper salt from Oaxaca. Built with care, depth and tradition by @chefcorrochio at @corrochios

Chef @chefcorrochio from family-run Mexican restaurant @corrochios demonstrates his octopus tostada technique: boiling octopus with double cream, avocado leaves, lard, garlic and salt, scaring it three times to preserve the skin, then cooking for 40 minutes. The tender octopus is sliced, butter-toasted, and served on a crispy tostada with spicy jalapeño mashed potato, homemade güero mayo, and sesame seeds.

Corrochio’s X Donda X Koch Mezcal At the end of November we had the privilege of hosting our first ever international (!!!) takeover in the most beautiful venue - @donda_khana - in 🇩🇰 Copenhagen, thanks @kochelmezcal We had a 5-course set menu of some of @corrochios greatest hits, including our XO Taco, Tostada de Camaron, and Califa Taco. The cocktail menu - curated by @corrochios.cinco with @el_mental_bykoch mezcal - featured our signature El Rey, alongside some new drinks we hope to launch on the Cinco menu this month. Rewind 4 years, Corrochio’s was just shy of 8 weeks open in a little 30-capacity bar-turned-resturant basement space in Dalston. The Koch Espadin was one of only 5 mezcal we had on the backbar, and we had a total of 10 dishes on the entire food menu. Never in our wildest dreams would we had imagined we’d be given the opportunity to one day serve Corrochio’s food & drinks in another restaurant, overseas. Mind blowing, really! Still can’t believe we got to do something so fun. This experience is not without (a lot!) of thank you’s. To the Donda familia. @instaqasim for trusting us in your home, and the wonderful support and hard work of the FOH & kitchen teams who helped deliver the Corrochio’s experience on the night. To @ed_weirdooo - our head bartender in Cinco - who still managed to travel, and smash out 140 cocktails, despite almost losing his index finger (who we affectionately named Carlos) a week earlier. If you look close enough you can see Carlos 😂 Of course, none of this could have been possible without @kochelmezcal @el_mental_bykoch @mezcal_wario @sprit_co @the_hungry_cocktail_guy , and Oscar for bringing extra bottles of Koch at the 11th hour for our agave-loving guests! We can’t wait for our second Chef’s Table this Sunday the 14th December - ‘Birria Posada’ For Volume 2, @chefcorrochio will be bringing you a menu inspired by his childhood, from one of his favourite restaurants in Guadalajara - Birria Chololo @chololobirrieria We’ll be hosting this intimate event downstairs in @corrochios.cinco - one long table, with a 3-course menu, shared family-style. An event where old friends can come together, and new friends can be made. Featuring birria de chivo, homemade tortillas, esquites, queso fundido, homemade salsa, and of course, a tequila drinks menu by @tico.tequila , fitting for this Jalisco-style feast. Introducing Corrochio’s Chef’s Table. A series of intimate supper clubs hosted in our beautiful cocktail bar @corrochios.cinco We are kicking off with no other than Lalo and Romi from @ofrenda_London . Both with an extensive career in restaurants, their passion for food and love for the kitchen is incontestable. Together with our house chef @chefcorrochio will be delivering a trip trough regional Mexico in 6 courses paired with drinks, either alc or non-alc, curated by our Head bartender @ed_weirdooo and executed with the @thelostexplorer range of agave spirits. We would love to keep the menu a surprise however is you just can’t wait we are happy to share it with guests upon request. We will consider all dietary requirements.
