A comfort food classic with a healthy twist 🤫 Recipe below ⬇️
Green Mac & Cheese
Ingredients:
250g macaroni
60g butter + additional 1 tbs
1 bunch broccolini, coarsely chopped
1 bag baby spinach
1 bunch flat leaf parsley
1 bunch dill
½ cup peas
50g plain flour
1 tbs chopped garlic
750ml milk
1 tbs Dijon
200g gruyere
1 tub bocconcini, chopped
Method:
Preheat oven to 180C. Cook macaroni in boiling salted water according to packet
instructions minus 1 minute. Add the broccolini in the last 2 minutes of cooking. Drain well
then toss with 1tbs of butter. Next blitz spinach, parsley, dill and a third of the milk. Set
aside. Next, melt butter in a large pot over medium heat. Add garlic and cook gently until
softened. Add flour and cook for 1 minute. Add remaining milk, whisking constantly, until
well combined. Bring to the boil, then reduce heat to low and simmer, stirring constantly,
for 2 minutes or until thickened. Remove from the heat & stir in Dijon mustard and cheese.
Stir to combine. Add the spinach mixture, stirring well then add macaroni and broccoli and
season. Transfer to baking dish, tear and arrange the bocconcini and scatter with toasted
breadcrumbs and bake for 25 minutes. Serve immediately
