🥐 Hand rolling croissant dough is one of the most challenging tasks for homebakers without a machine at home. I started making croissants 5 years ago from home. Consistently failed. It is a combination of physical and mental strength: 💪 Physical: Imagine a hand workout for 2-4 hours 🧠 Mental: All kinds of doubts for 5-7 hours until they are fully baked and edible. What I learnt after 5 years: ✅ Recipe for the dough is important. A combination of flour that gives you both strength and extensibility. ✅ Technique in kneading the dough is important. ✅ Temperature control is important. An aircond in the room can be your best mate but not the only option. Ice packs are life saving! ✅ Choice of butter for lamination, go for French butter because of higher melting point. Unsalted or Salted is up to you. ✅ Croissant lamination is a true test of patience. Impatient bakers have 100% failure rate to achieve honey comb structure. Rushing to roll out the dough will result in tearing of the dough or melted butter absorbed into the dough, which end up like brioche instead of croissant. 🏆 Every time my students share pictures of their hand rolled croissant, I feel happy for them. Because they don't have to go through years of disappointment. I'm always there to support my students even after the class.
