Charles Duan (Gaea Melbourne) will be joining us this Sunday cooking up a 3 course modern nose to tail Mongolian style BBQ feast.
Hailing from Inner Mongolia, Charles is a chef turned sommelier, a food lover, a wine enthusiast and just a generally cool guy.
Featuring home raised lamb from Lyons Will, Charles will be utilising every part of the whole animal and cooking everything over fire. Expect smokey, exciting, morish and fun dishes with Mongolian spirit.

Chef-turned-sommelier (currently at Gaea), Charles is returning to the kitchen and the pop-up scene. After his successful events at Cardwell Cellars and Sleepys Cafe weโre thrilled to have him here.
Heโll be serving up delicious Mongolian food on sticks, which is our preferred way to eat anything really. Weโll also be digging in our cellar for some stellar wines to match.

Tonight's the last night of our beautiful collaboration with Charles @charrrrlessss & Joey Tai @joey___tai for our ROKU OMAKASE & 'Lai Yi Ge' Cocktail Pop-up. What was meant to be a pop-up till the end of last year continued on till this year due to popular demand.
Over the last few months our head chef Ken @ken_ibuki and Charles have come out with so many interesting skewers of yakitori and amazing sushi, whilst on the bar side of things, Joey kept everyone lubricated with creative cocktails!
