When Kim Mai and Jeff Wong couldn’t find the kind of Vietnamese coffee culture they loved from their hometowns of Seattle and San Jose, they decided to create it themselves. After traveling through Vietnam and Southeast Asia, they came back with a fresh concept: modern Vietnamese coffee that blends tradition with creativity.
Their drinks feature robusta beans imported from Vietnam (with twice the caffeine of arabica), housemade jasmine syrups, and creams infused with Asian flavors like ube and pandan. What started as a pop-up quickly became a local hit. Now, they’re opening their first brick-and-mortar: Chance’s Coffee.
Named after their rescue pup, Chance, the shop will include a pet-friendly patio, specialty drinks, and a small menu of pastries, parfaits, and Asian-inspired bites like pandan waffles. They even plan to host adoption events for local rescues. “We rescued him from Mexico, so we took a chance on him, and we took a chance [when] we moved to San Diego, [and] now we’re taking a chance on this business,” Mai says.
Chance’s Coffee soft opens October 25, with a grand opening celebration to follow. “It won’t be your traditional Vietnamese coffee shop,” Mai promises.

This collab is extra special to us because it brings both of our cultures, flavors, and stories together in one menu. Vietnamese 🤝 Philippines.
One morning, we spent hours R&D’ing—pulling shots, testing blends, and playing around with different flavor combinations to find drinks that felt true to both Chance’s Coffee and Kaphé Muna.
Jeff & Kim, the owners of Chance’s Coffee, were actually some of the first people to support Kaphé Muna when we were just starting out, so getting to create alongside them feels really full circle.
We’ll be featuring 2 collaborative drinks:
