Our Guest Chef series continues Tuesday, May 19th with our sold out dinner featuring Casey Palermino of Seline in Los Angeles. Originally from Metro Detroit, Casey grew up in the kitchen following the footsteps of his father and grandfather, and his career led him across the country to acclaimed concepts like Willows Inn on Lummi Island (WA) and Pasjoli in Los Angeles. At SELINE, he helps develop the ambitious storytelling-driven tasting menu, offering food that is both unique and familiar, striking a delicate balance between intrigue and comfort, but always delicious. It’s was so surreal to have been able to play a very small role in the making of @thebearfx it’s wild to see the amount of dedication these actors put in to learn our craft for just a few scenes. Thanks so much for the last minute addition to the episode @courtney__storer and thank you to @willpoulter @shappyshaps for the great time on set showing me what you guys do best!

Northwest “risotto”. Pine nuts and Ronde de Nice squash are cooked together like risotto. Mounted with Dungeness crab and finished with a local cheese similar to Parmesan
