Living here in Jakarta, we are daily witnesses to a profound gap — a world of fine dining that exists beside a world where a single dollar must stretch At @alice_jakarta — we repurpose old croissant from our service. Transformed into an acidified burned croissant stock drawing out the vanilla and buttery notes of Hennessy VSOP. At @tomsjakarta — bread cuts from the night before are transformed into a no-sugar-added bread caramel. The starches build toasted oak mouthfeel from years of resting in French oak. Both waste products, are dehydrated & blended into powder. Combined with a caramel base of organic local palm sugar, to create a toasted caramel bread tuile. That luxury, done right, leaves nothing behind. At @langham_jakarta we believe the ultimate form of respect… is to use what we have been given. Our ritual is mindfulness. To give a second chance — to produce that took so much care & effort, to be made. This is Hennessy my way. . One thing that comes up constantly with podcast guests is the sheer number of jobs they never knew they were signing up for. Maintenance. Accounting. HR. Social media. Plumber. Project Planner. etc. etc. etc. etc For me, one of those jobs I picked up was graphic design. I had a background in photography but zero design experience when we opened our venue. We also had zero budget to hire someone to design menus for us, so I figured it out myself. Oh, and this was before AI could do any of this, so everything you're seeing here was drawn by hand on an iPad. This Menu was inspired by the Dada art movement. We wanted to capture the idea of surprise, unconventionality, anti-logic, and we used that as the lens for the entire menu. This was a really fun one! What's the job ownership forced you to learn?
