“As the valley came into view I saw what can only be described as a dream - a dream of green and gold and the litttle house that sat amongst it all - a house that Jorge built brick by brick over the last decade.”
Catch the wind with me as I travel far from the familiarities of home - the pastures of the Paniolo and the Hawaiian Cowboy - into a world all its own. A land sculpted by towering peaks and wide-open spaces. A frontier where the Gaucho, the Cowboy of the South American Pampas, roams free on the vast canvas of the plains.

Backyard pig ribs 🧑🍳 one of my all-time favorite meals.
I’m always using my @traegergrills which brings this dish to a whole new level, but you can get a similar result in the oven—just add a little liquid smoke to your BBQ sauce.
Got lucky with a super fatty pig, so I could throw the rack of ribs straight on the grill with no cover and it stayed juicy. If you’re working with leaner ribs, I’d cover them with foil to keep the moisture in.
Simple, solid, unreal every time.
And the best part… they’re walking around everywhere out here 🤙🏽
Mahalo @alexmakai for helping me get this pig - couldn’t have done it without you.
And thank you @hunterselement for keeping me hidden 🤫
Tag three friends and I’ll enter your name to win this copy of Kimi’s Kitchen twice 🪄💚 the best cook book ever, now available on Amazon! Thanks again for my copy mama @kimi_swimmy I freakin LOVE it!
In my last post I showed a few clips of me bringing home some fish for dinner, but I wanted to make a video that walks you through a bit more of the detail behind the hunt 🐟🎯
Spearfishing is such a beautiful practice, and I’m really grateful to my pops for getting me into it at such a young age. Having a skill set that connects me to the ocean and the food on my table is one of the highlights of my life.
Glad we managed to get in the water before the torrential downpour rolled through ❤️🤙🏽#
Here’s Malia’s recipe for the Poisson Cru that we cooked up in our last post 🥥🐟
Poisson Cru (8–10 servings)
~2 lbs fresh fish (Uku)
2 cups unsweetened coconut milk
2 small bell peppers, diced
Handful of cherry tomatoes, cut in halves or quarters
1 cucumber, diced
2 small carrots, shredded
⅛ cup chives or green onion, chopped
2 limes
2–3 calamansi limes
¼ cup fresh cilantro, chopped
1 tsp fresh garlic, grated
Salt & pepper to taste
However, have fun with it! This is a very forgiving dish — the measurements don’t have to be exact and we often swap out ingredients for whatever we score at the farmers market or can find in our garden. 🥕👨🌾
Back when my wife and I first started dating, we took a trip to Tahiti. While we were there, I speared a fish and made one of her favorites — Poisson Cru.
Since then she’s come up with her own recipe. She’s basically the head chef of the house now 🧑🍳 and I’m just happy for any excuse to go out and bring home some fresh ingredients 🐟🎯
Glad we caught a short window of good wind before the heavy rain rolled back in.
There’s something special about catching your own food and cooking it together. Honestly, it might be my favorite thing to do.
Uku Poisson Cru with ‘ulu chips 🤌🏽
Who wants my wife’s recipe? 😉#spearfishing #catchandcook #food
A couple days ago I turned 30 years old 🥳 so here’s a little film dump from the last year of living 🎞️
That morning I woke up, went to work, and had dinner with my family.
And I thought to myself — how lucky am I ❤️ that I wouldn’t want to spend my 30th birthday any different than I’d spend any other day 😂
I get to wake up next to my best friend and make her coffee.
I get to work a job that I’m proud of.
And I love spending every second I can with my family.
Then I started thinking about my family, my friends, and everyone I’m blessed to keep close in this life.
We’re all happy and healthy right now. We’re excited about things, we love our lives, we love our partners, some of us are even starting families of their own.
It’s a magic time in life, and I’m really grateful for it — and I’m excited for what’s ahead 💫❤️
