A question we’re often asked, and one that deserves thoughtful consideration. From the time of day to the season, and of course the menu itself, every element plays a part in shaping a drinks offering that feels both seamless and considered.
As more guests choose to moderate or forgo alcohol, we always recommend including elevated alternatives alongside traditional pairings. The experience should feel just as special – never an afterthought. We are particularly inspired by producers like NON, who craft complex, layered flavours designed to complement food, rather than simply imitate wine. From sparkling teas for receptions to refined, low/no-alcohol pairings throughout dinner and on the bar, the options have evolved beautifully.

INSPIRATION
For our recent Spring–Summer 2026 menu launch at The Walled Garden Cobham, our pairings were chosen to reflect the countryside setting, the relaxed elegance of a lunch service, and the seasonal menu being served. Guests were invited to choose between options with each course:
