Sourdough Scoring Tutorial 🙌🏼 This is how I like to score my sours. Fresh blade held low, almost flat to the loaf, with a slight curve to create a more pronounced ear. One clean, intentional score. That’s it. No re-scoring, no hacking at the loaf five minutes later, just commit and let the bread do the work. The faster you go, the more of a clean ear you will get. Let me put you on game. Short clip from last week 🩷 Times gone by so fast! It's almost been 2 years since I started my small cottage bakery in our small town Porterville. When I first started I had to learn how to utilize the small space I had, so I came up with this method that allowed me to bake 6 sourdough loaves at a time! No-Waste Dill Pickle Sourdough Recipe 500g bread flour 150g active starter 285g water 10g salt • chopped dill & garlic (add during stretch & folds) — use extra dry or fresh dill to taste • chopped pickles (dabbed dry, add during shaping) — don’t overdo it, they add extra moisture! 1. Mix flour, water, starter, and salt until combined. 2. Rest 30 mins, then do 4 sets of stretch & folds. — Add dill & garlic during folds. 3. Bulk ferment at room temp until dough is puffy and airy. 4. Shape and gently fold in chopped pickles. 5. Cold proof overnight for deeper flavour. 6. Bake at 450°F — 20 min covered, 15–20 min uncovered. Tangy, herby, garlicky, and low waste. It’s National Sourdough Bread Day! 🍞 Celebrate with this cheddar and black sesame sourdough loaf recipe. When it comes to inclusions in sourdough, I say measure with your heart ❤️! The rich nuttiness of black sesame paired with the sharp, melty goodness of cheddar is a match made in bread heaven. 🥖 Sourdough Recipe: 📌 500g flour 📌 300g water (increase per your flour's tolerance) 📌 100g active sourdough starter 📌 5g salt 📌 Black sesame seeds (to taste) 📌 Shredded cheddar cheese (to taste) 📝 Method: 1️⃣ Autolyse: Mix flour and water until fully combined. Cover and rest for 45-60 minutes. This helps hydrate the flour and kickstart gluten development. 2️⃣ Fermentolyse: Add your sourdough starter and salt to the autolysed dough. Mix until well combined. Let it rest for 20-30 minutes. 3️⃣ Stretch & Fold (or coil fold): Continue developing strength in your dough. Perform 4-6 stretch and folds (spaced 30-45 min apart) until the dough holds its shape. ✨ After 1-2 stretch and folds, add your inclusions—always measure with your heart! ❤️ 4️⃣ Bulk Fermentation: Let the dough rise until it’s more than doubled in size. 5️⃣ Shape: I love the envelope method for this. Then place in a banneton. 6️⃣ Cold Retard: Pop it in the fridge overnight for flavor development. 7️⃣ Bake: Preheat your oven to 450-485°F (depending on your oven). Sourdough scoring tips: Be intentional and move quickly. Don’t over think just do. Starting out, dont make fancy scoring designs. keep it basic with a giant X or a side slash and maybe throw in some wheat stalks, once you’re confidence is built up. ➡️The design is there for aesthetic but it doesn’t add to the flavor Why score your bread? It helps signal your bread to expand here. The expansion is where the steams escapes and growth can occur. What should you look for in a bread lame? I personally feel like you should find something that fits comfortably in your hand. If it’s comfortable it helps give you confidence. This little bread lames feel awkward and are too little. ⚾️ Batter Up… for Sourdough! ⚾️ This one’s for the baseball fans! I turned a classic sourdough loaf into a home run with some decorative scoring and hand-painted details. Using Ann Clark white & @chefmaster deep red food coloring, I added those signature red stitches after the loaf had been in the oven for six minutes—just enough time to let the crust set before bringing the details to life. All scored with my @breadsmart bread lame because precision matters in both baking and baseball! Baked for the entire duration with the lid on to maintain food colouring and prevent darkening. 🔥 Fresh from the oven and ready to steal the show.
