No-Waste Dill Pickle Sourdough Recipe 500g bread flour 150g active starter 285g water 10g salt • chopped dill & garlic (add during stretch & folds) — use extra dry or fresh dill to taste • chopped pickles (dabbed dry, add during shaping) — don’t overdo it, they add extra moisture! 1. Mix flour, water, starter, and salt until combined. 2. Rest 30 mins, then do 4 sets of stretch & folds. — Add dill & garlic during folds. 3. Bulk ferment at room temp until dough is puffy and airy. 4. Shape and gently fold in chopped pickles. 5. Cold proof overnight for deeper flavour. 6. Bake at 450°F — 20 min covered, 15–20 min uncovered. Tangy, herby, garlicky, and low waste. Simple Sourdough Focaccia šŸ„–šŸ¤Œ So simple that anyone can make it and oh wow, the sourdough makes such a HUGE flavor difference 🤭 Sure, it takes time… but gosh, it’s worth it! save this recipe for later and MAKE IT! šŸ™Œ Ingredients: 425 grams water 65 grams active sourdough starter 500 grams ap/bread flour 10 grams salt 5 tablespoons olive oil, divided *optional toppings: flakey salt, red onion, olives, rosemary Tools: kitchen scale big bowl glass or metal baking pan Breadsmart Danish Dough Whisk & Smart Scraper Duo Instructions: *start in the evening to have focaccia ready the next day or super early in the morning for the same day. 1. Mix water and starter in a large bowl. 2. Add the flour and salt and continue mixing until fully combined. 3. Cover and let the dough rest for 30 minutes - 1 hour, then do a few rounds of stretch and folds (at least 2-3 rounds, Smart Scraper helps to lift the dough). 4. Cover and let it rise at room temp for 6-8 hours (for same-day bake) or in the fridge for 10-12 hours (for next-day bake). 5. Once your dough has risen and doubled in size, prepare a baking pan by coating it with 3 tablespoons of olive oil. 6. Turn the risen dough out from the bowl into the pan with Smart Scraper, shape into a rectangle, then fold it like an envelope to make a neater rectangle. 7. Next, flip the dough over so the seam is facing down. 8. Cover and let rise for 4-6 hours more, should nearly double in size and fill your baking pan more. 9. When ready to bake, preheat oven to 425 degrees. Drizzle the remaining 2 tablespoons of olive oil over the dough. Press with all your fingers into the dough from one side to the other to dimple and stretch it to fill the pan (DO NOT pop any air bubbles). 10. Top with the salt and any other toppings you like (we did red onion) and bake for 30-35 minutes, until golden and bubbly. 11. Remove from the oven and allow it to cool down before slicing. āš¾ļø Batter Up… for Sourdough! āš¾ļø This one’s for the baseball fans! I turned a classic sourdough loaf into a home run with some decorative scoring and hand-painted details. Using Ann Clark white & @chefmaster deep red food coloring, I added those signature red stitches after the loaf had been in the oven for six minutes—just enough time to let the crust set before bringing the details to life. All scored with my @breadsmart bread lame because precision matters in both baking and baseball! Baked for the entire duration with the lid on to maintain food colouring and prevent darkening. šŸ”„ Fresh from the oven and ready to steal the show. I decided to cold ferment before shaping my loaf… Here’s what happened.. This was not my original plan with this loaf, but on vacation I proofed my loaf overnight and we left immediately in the morning for the day. I didn’t have time to preshape and shape again, so I decided to immediately put it in the fridge. It sat for a full 24 hours! The next morning I pulled it out, did my preshape and shaping and immediately scored and baked. I’ve always done the shaping then cold ferment before baking, this makes my loaf easier to score since it gets a firm ā€œskinā€ on it. Hence why I didn’t do a design score like normal. The end result? A delicious and sour loaf! Even though I shaped it the same, it ended up more like a boule than batard. But still DELISH! So if your dough is doubled and you don’t have the time to shape it, throw it in the fridge and shape it later! Have you ever done this?! Let me know!!!
