Breaking Bread After Dark : Outtakes Vol 2.
A few snapshots into our intimate Tapas night- Breaking Bread After Dark*. It was a Full house which matches our hearts. A night of friends and food. So much fun making @coffeewasblack our house for the weekend to bring our vibe and turning a coffee shop into an ANALOG bistro for a new.
Everyone loved the menu offerings, crowd favorites were our Yardi platter, Oyster Pate Crostini, especially our “Honey Cajun Tandoori” Chicken skins which sold out almost as soon as we could serve. Moreover ,this was the surprise launching of our first product— our “HONEY CAJUN TANDOORI” spice blend, which will go up online for sale to the community ,this Friday!
Nothing but Gratitude and appreciation. Love to the Community for coming out 🥖 ✨🍽️.

Dijonnaise Roasted chicken + pickled beets + roasted carrots tossed in (homemade)pomegranate molasses, roasted zucchini, with a scallion-pickled jalapeño honey “greeñaise”
I’ve been in the mood for some pickled beets. (One of my Moms favorite foods). Every-time I think of them, she comes to mind. I remember being a kid not caring for them at all. But now I love them.
So I made this Dijonnaise chicken base (mayo +Dijon+ smoked paprika+garlic + dill+thyme a lil pickle brine). Accompanied with a few roasted veggies like Squash +Zucchini , Carrots tossed in a homemade pomegranate molasses (because I couldn’t find any in store near me ),roasted Beets that I pickled with homemade pickling solution. Finally laid with green scallion-pickled jalapeño honey aioli to give the chicken a herby/garlic/sweet-heat kiss.
Overall this was a well rounded dinner.

- A reimagined take on one of my favorite childhood meals — Beanies & Weenies.
Slow-baked butter, northern, and cannellini beans in a smoky tomato-molasses glaze (Update)->> ( that I fortified with gochujang 🌶️ and a homemade fermented blueberry compote 🫐!! )Topped with a juicy charred Kiolbassa beef sausage.
Finally (Updated) -> (Garnish with onions + shallots crisped in garlic and shallot oil) fresh herbs, and cracked pepper. served with a thick slice of sourdough, fire-kissed and ready to sop up the whole thang!
(Yall the new addition of the gochujang and fermented blueberries gave it such a boldened profile, I was so proud of myself for making my recipe even better).
Made me even more confident in myself to recipes.)

“Char & Molasses “ Gourmet Baked Beans
Butter, Northern & Cannellini Beans + Kiolbassa Sausage + Gochujang-Blueberry Glaze + Charred Sourdough
INGREDIENTS
Beans: • 1 cup butter beans • 1 cup great northern beans • 1 cup cannellini beans
Aromatics & Sauce Base: • 1 yellow onion, finely diced • 4 cloves garlic, minced • 1 bay leaf • 1 sprig fresh thyme (or 1 tsp dried) • 1 tsp smoked paprika • 1 tbsp gochujang • 2 tbsp fermented blueberry compote (or sub with blueberry jam + splash of balsamic if needed) • 1 cup crushed fire-roasted tomatoes • 3 tbsp blackstrap molasses • 2 tbsp brown sugar (or maple syrup) • 1 tbsp tomato paste • 1 tbsp Dijon mustard • 1 tbsp apple cider vinegar • ¼ cup bourbon (optional) • 1 tbsp Worcestershire sauce • Salt, cracked black pepper, cayenne (to taste) • 2 tbsp butter (or olive oil)
Protein: • 1–2 links Kiolbassa beef sausage, sliced & seared until charred

Chicken Katsu Don w/ pickled Ginger + scallion garnish. Made with a homemade dashi that I make with bento flakes,shoyu, “Po Lo Ku”mushroom seasoning, miso and few other ingredients.
This is probably one of my fav meals to cook in the past 2 years I’ve been making it. So simple that anyone can make it but there smallest elements make it for a beautiful meal.
