Agave “Anovillado” a palabras de Don Valente, un agave en extrema madures al que se le “escapó” la oportunidad de enquiotar, en extrema madurez y “pintó”. Agaves que rara vez hay oportunidad de Jimar.

The Agave field is lived, recognized, and felt… It’s studied later, but it all begins with the intention of understanding what makes Tequila an agave distillate that so easily shares with us the history of the land, the roots, and passage of the time of such a marvelous plant. “Anovillado” agave, in Don Valente’s words, is an extremely mature agave that missed the opportunity to grow the Quiote, having reached its peak maturity and turned “pinto” Agaves like that rarely have the chance to be harvested.
