After 24 hours we load the Big Green Egg up with lump charcoal and oak to give our shoulders a nice char and smoke bath. We then take the shoulder, marinate it in our barbacoa sauce, wrap it in banana leaves, and steam it for several hours until it falls apart. The rotisserie does the work. The Egg does the rest. Ingredients: - 1 whole chicken (3–5 lbs) - 2 tbsp olive oil or melted butter - 6 tbsp of your favorite all purpose or poultry seasoning Steps: - Pat the chicken dry with paper towels (key for crispy skin) - Rub all over with olive oil or butter - Coat the chicken evenly with seasoning—don’t forget the crevices - Tie the legs and wings (truss) and tuck wings for even cooking - Preheat Egg to 375°F (190°C) - Secure chicken on rotisserie accessory - Cook for 1–1.5 hours until internal temp hits 165°F (74°C) in the thickest part Serving Ideas: - Slice and serve with roasted vegetables or potatoes - Shred for tacos, salads, or sandwiches - Save the bones for homemade chicken broth
