Feel like adding a little taste of Europe to the dinner table this Thanksgiving? Try @alyssanponticello Italian style stuffing.
ITALIAN-STYLE STUFFING
Prep time: 15 minutes Cook time: 30-40 minutes
8 ounces diced pancetta
4-6 cloves of garlic,minced
4 shallots (or 2 small onions), finely diced
2 cup of turkey/chicken broth (or turkey drippings, if making alongside a roast turkey)
½ cup unsalted butter
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
¼ cup fresh sage, roughly chopped
½ cup fresh parsley, roughly chopped
1 cup cooked chestnuts, diced
½ cup hazelnuts, roughly chopped
1 large loaf of day old Italian bread or ciabatta (diced into approximately 1 inch cubes)
Preheat oven to 350 degrees.
Place a large cast iron skillet on a medium heat burner and allow to heat for a few minutes. Once the pan is hot, add the pancetta. Cook for 3-5 minutes, stirring occasionally, until the pancetta starts to cook down and become crispy.
Add in the garlic and shallots and continue cooking until the shallots start to turn golden and a bit translucent, about 7-10 minutes. Pour in about ½ the broth, stirring as you do so to deglaze the pan. Then add in the butter and continue cooking and stirring until it has melted. Then mix in the salt, pepper, herbs, chestnuts and hazelnuts as well as the remaining broth. Lastly stir in the bread cubes. Mix until well combined and the bread is evenly coated with liquid. If it seems to dry, feel free to stir in a little more broth.
Transfer the skillet to the oven and bake for 15-20 minutes, just until the stuffing has set and is slightly crispy around the edges. Enjoy!
NOTES
Instead of pancetta, you can use Italian sausage. If you’d like to kick it up a notch, use a spicy Italian sausage.
If you’d like your stuffing to have a little heat, feel free to mix in 1 teaspoon of red pepper flakes or Calabrian chili paste.
If you don’t have a cast iron skillet, you can make this in a large regular skillet, then transfer it to a large baking dish before placing it in the oven.

Zoe's Steak Tacos
Ingredients:
Seasoning for the meat:
* Garlic
* Ginger onion
* Liquid amino acids
* Apple cider vinegar
* Tamari soy sauce
* Toasted sesame oil
* You can add either honey or brown sugar
Guacamole:
* Avocado
* Onion
* Garlic
* Salt
* Lemon
Salsa:
* Tomatoes
* Onion
* Salt
* Pepper
* Lemon
Side:
* Tortillas
Side:
* Queso Blanco
Side:
* Asparagus
* Lemon and olive oil
Preparations:
* Divide meat (5lbs)
* Season one batch with honey and the other with brown sugar
* Add in all the seasoning ingredients as you see fit / taste test it
* Let the meat marinade for 10 minutes at least
* Set the air fryer to preheat 400 degrees
* Some air fryers are different so you may want to experiment with a small piece of meat first
* Ours was cooked best at 400 for 8 minutes and we flipped it at 4 minutes
* Be sure to use a nonstick spray after each use
* We used an avocado oil spray

This #PrideMonth we wanted to highlight Mariachi Arcoiris de Los Angeles—the first-ever LGBTQIA+ mariachi band! The band was founded by Carlos Samaniego after he grew tired of the constant machismo and homophobia that he encountered in traditional mariachi groups. Today, they proudly perform beautiful Mexican folk music all across the country and are creating the way for future generations of LGBTQIA+ mariachi performers.

Colombian-American artist and activist Ruben Rojas has one universal message that he hopes to teach his son: to live through love. It’s the slogan behind many of his murals—which can be seen all across Los Angeles—and one of his own personal mantras. Rojas and his wife, Zee, hope to live by example and guide their newborn son as he learns to navigate life, become his own person, and make the world a better place.
