Coava Exclusive Release: Benjamin Paz Jaguarundi Exclusively at our retail locations & online, Benjamin Paz Jaguarundi is back! So much can be said about Benjamin Paz and his impact in specialty coffee. His connection and contributions to Coava, Honduran coffee, importing, Cup of Excellence, and elevated varietal cultivation can sometimes make him feel larger than life. Coava has been working with Benjamin Paz ever since we began offering Benificio San Vicente Coffees over a decade ago, and we are proud to offer this special lot from his famed Finca La Salsa Farm. This limited offering is a beautiful blend of Geisha, Orange Bourbon, and Yellow Typica varietals, creating a plush, tropical, and floral cup that truly wows. To maximize this coffee, our green team has once again used our density sorter to elevate this offering, pushing the quality and presentation of this stunning lot to new levels. In the cup, look for notes of peach, blood orange, and chardonnay. With an incredibly limited supply, this coffee will be around for only a moment, so make sure to grab a bag and enjoy this amazing offering from a special producer and person.

𝗣𝗥𝗘-𝗢𝗥𝗗𝗘𝗥: 𝗕𝗲𝗻𝗷𝗮𝗺𝗶𝗻 𝗣𝗮𝘇 𝗚𝗲𝗶𝘀𝗵𝗮 / 𝗙𝗿𝗶𝗲𝗻𝗱𝘀 𝗢𝗳 𝗙𝘂𝗴𝗹𝗲𝗻 Our Friends of Fuglen Special Edition coffee is back— This time featuring our friend Benjamin Paz and the geisha from his farm La Salsa in Honduras 🇭🇳 This coffee is available in extremely limited quantity. Once it is gone, it’s gone! Pre-order now to taste one of the best coffees of the year. *𝖮𝗋𝖽𝖾𝗋𝗌 𝖾𝗑𝗉𝖾𝖼𝗍𝖾𝖽 𝗍𝗈 𝗌𝗁𝗂𝗉 𝟤𝟢𝗍𝗁 𝖩𝖺𝗇𝗎𝖺𝗋𝗒* Fuglen has been working with @benjaminpaz since 2020 and some of our personal friendships go back to 2012. He has visited us several times here in Oslo, enjoying coffee, sharing meals, and hosting presentations for our staff on coffee production in Honduras. In 2015, Benjamin decided to buy his own farm, La Salsa, and has been producing coffee there since. The farm is 3,5 hectares large, and Benjamin has planted Pacas, Bourbon, Caturra, Catuai and Geisha varieties. Benjamin has been producing Geisha coffee since 2021 and is a two-time winner of the prestigious Cup of Excellence award (2023 & 2024). We are proud to be able to work together with such a dedicated producer and friend! 𝘞𝘩𝘢𝘵 𝘪𝘴 𝘍𝘳𝘪𝘦𝘯𝘥𝘴 𝘰𝘧 𝘍𝘶𝘨𝘭𝘦𝘯 𝘚𝘱𝘦𝘤𝘪𝘢𝘭 𝘌𝘥𝘪𝘵𝘪𝘰𝘯? A few weeks ago, I was in Berlin at a cupping event hosted by @populus.coffee . We tasted some of the coffees that were roasted in their new roastery in Shanghai. Everything was fantastic. However, I was particularly impressed by two washed Geishas from Honduras, which I ordered immediately. They were from @benjaminpaz and his cousin @angelarturocafe . In a recent episode of the @timwendelboe podcast, Benjamin describes how he contributed to the development of the coffee region in Santa Barbara. Definitely worth listening to. Incidentally, I enjoyed my first coffee from him more than ten years ago at @cafesbelleville in Paris. Since then, I've been following his development on Instagram. If you get the chance, be sure to try one of his coffees – or the beans he exports ☕️🇭🇳❤️ #boschcoffee #populuscoffee

featured producer | benjamin paz To many within the specialty coffee community @benjaminpaz needs no introduction. He is a legendary producer having twice been awarded 1st place in the Honduras Cup of Excellence competition and his coffee is regularly featured in national barista competitions. But his work goes far beyond just his impressive achievements as a coffee producer. Benjamin also runs the Beneficio San Vicente export mill in Santa Barbara, Honduras where he has dedicated his life to elevating Honduran coffee and building a robust network connecting roasters with producers. Originally introduced via the connection of a family friend, Marta Campos-Mace @camposmace , we were able to visit him for the first time during the down season and witnessed first-hand his impact on the community. As Benjamin toured us around the Santa Barbara mountain every producer we passed would stop to say hi and Benjamin would tell us what roasters are buying their coffees. It was clearly evident just how much Benjamin cares for the community and how much they care about him. He also freely shares seeds from his award-winning gesha plants with other Honduran producers and works with them on improving their processing methods. Visiting Benjamin again during the harvest season showed off another side of just how hard he works. Hundreds of roasters come to Santa Barbara every year to visit and connect with producers and Benjamin organizes all of it. Our day would start at 7am and end around 11pm but Benjamin's often would start at 4am so he could coordinate with roasters around the world on their upcoming visits. He manages everything for the roasters while in Santa Barbara, from picking up roasters at the airport and driving 1.5 hours to Santa Barbara, to booking hotel rooms and organizing all meals. With his cousin Arturo Paz @angelarturocafe (whose coffee has also been featured on our menu) they coordinate every day to figure out what farms the roasters need to visit, who will drive them, and what coffees need to be prepped for the cupping table at Beneficio San Vicente. It is incredible to see all of the work in action. (Post continued in comments)

ADVENT DAY 20 // Honduras Sagastume Family Natural The parainema variety is incredibly unique, and this natural-processed lot comes from Adan and Kilverth Sagastume, a father-and-son duo farming in Honduras’s Santa Barbara region. Sourced through our partnership with Benjamin Paz, this lot reflects a new generation of post-harvest experimentation in a region long known for its washed coffees. With layered fruit, sweetness, and structure, it highlights the Sagastumes’ deep roots and evolving perspective on coffee. Swipe to hear about this coffee from our good friend @benjaminpaz Grind size: 562 microns Brewer: Kalita 185 25g coffee -> 400g water 0:00 Bloom to 50g 0:30 Heavy spiral to 150g 1:10 Heavy spiral to 300g 2:00 Heavy spiral to 400g Total drain time: 2:50

Alejandro Aguilar dyrker kaffe i fjellene nær San Andrés, Lempira, Honduras.

It's been 10 years since I first met Eulogio Martinez. Eulogio is a great inspiration for me. Back in the '70s when he and his wife came to Las Flores, St. Barbara. They started out with 0,5 Manzanas (0,35 hectares) of coffee. Eulogio worked hard, and was over time able to buy more land for himself and his family. Today their total coffee operation covers 30 Manzanas (21 hectares)  All eight of Eulogio's children and his wife now has their own land and works with coffee. As a quality footnote Eulogio was the 2015 cup of excellence winner in Honduras. 🇭🇳☕🇳🇴 @kaffe.steinar @lindbak_kaffe
