Not Happy! Sadly it's the last day of summer šŸ˜” But we have had a great season, and there is plenty more beekeeping to be done before we head into a short winter slowdown 😁. šŸ This year I have had the pleasure of working with @beeonethird to raise queen bees, and today we pulled and caged the last round for this season from their mating nucs. šŸ We have marked all of the queens from this round with a yellow dot on their thorax. An afternoon in the life of a beekeeper! 3.5 hours condensed to 3 minutes 🄵 We’ve been silent on the socials these last few months, but that’s not to say we haven’t been working our backsides off trying to keep our bees alive through this crazy time in the beekeeping industry. We are now well and truely living with Varroa Mite through our whole operation, in each and every one of our 300 hives. Our team is constantly testing and treating for low to high mite levels across dozens of locations. Here, you can see Jack working through 50 hives of an afternoon, reducing them down to singles, harvesting 50+ supers of honey, placing organic treatments (for the mite) through every hive, getting ready for a move across town to a centralised site with another 50 hives. As we prepare to take 100 hives up to the Sunshine Coast to capture the Paperbark honey flow, these bees will be back in triples within no time. Not to do with bees, but something equally as interesting. This big brown (approx 1.3m by eye) was on a back road up to home recently. As I drove past, it looked like it had a flattened middle section so had to pull over safely to check on its situation, as a hit snake may need attention. I was thrilled to be witness to a fresh kill by this monster brown snake on what looks to be a fairly well sized monitor lizard. Simply epic! If you listen closely you can hear the defensive hiss about half way through. I knew this snake wasn’t going to go me with a mouth full of tucker, however I still kept my distance and ensured it moved off into the brush not long after to avoid the currently busy hinterland roads. The Eastern Brown Snake (Pseudonaja textilis) is a highly venomous, slender snake common in eastern Australia, known as the deadliest land snake by venom toxicity, responsible for most snakebite deaths in Australia due to its preference for rodent-rich human environments, adaptable to varied habitats, and defensive posture when threatened, but generally avoids humans, with antivenom and prompt medical care crucial for survival. #brownsnake #reptiles #curious #deadlysnakes

Varroa Update 12/25 We’ve been now dealing with Varroa for around 6 months, in varying forms and volumes. We are yet to lose a colony, and have been experimenting with various forms of treatments and management techniques. Over all, happy days in our apiaries around SEQLD, with low to medium mite counts resulting from our monthly monitoring. An inspiring and grateful morning spent introducing two new urban locations to our list here in Brisbane, SEQLD. Thanks to @scapeau #SouthBank and @uqresidences #StLucia for taking us on as their new beekeeping partner for 2025 and beyond. We are excited to bring a new and exciting chapter to your premises, growing on the amazing few years under @garyshoney well serviced stewardship. Thanks for strong Bees Gary! Looking forward to welcoming @that.bee.guy.brisbane as our inner city and surrounds beekeeper too, great to have met you mate and we are looking forward to growing together. We are frothing to get these longer days into action, our bee populations strong and more fresh, local honey to our pollination partners and our neighbourhood friends.

This week’s menu highlights 1. @tarosramen X @frankies.smokehouse X @bella_and_tortie FIRE TONKOTSU SMOKED PORK COLLAR PIE This might be the best pie to date. Not too spicy (may be too much if you can’t tolerate any spice) but there’s definitely heat there from Taro’s ā€˜fire’ tonkotsu broth. Pairs perfectly with the peppery smoked pork collar from Frankie’s. Mixed with takana pickle, shallots and our flaky pastry. The perfect amount of meat and lush gravy. 2. + 3. GF Chocolate Delice w/ vanilla mascarpone. Option to add on Cherries Jubilee in Armagnac, and really, why would you not want to? Just look at that beauty šŸ˜ Chocolate Delice is a really smooth, soft dessert cake. Topped with a vienetta ribbon of vanilla mascarpone it is taken to another level with the cherries jubilee. Fresh cherries are cooked until just soft in an Armagnac orange syrup. 4. Lemon + Blackberry Cake Soft lemon chiffon, lemon curd, blackberry gel, fresh blackberry, vanilla mascarpone, toasted almonds 5. Vanilla + Raspberry Choux Choux au Craquelin, raspberry gel, vanilla mascarpone 6. + 7. Chocolate, Hazelnut + Espresso Chocolate almond tart shell, baked chocolate hazelnut mousse, espresso caramel (espresso from @kin.teneriffe + @almanac_coffee ) hazelnut cremeux, espresso mousse, spiced hazelnuts. 8. Jerusalem Artichoke, Rapini, Smoked Mozzarella + @sixeyedscorpion chilli oil quiche. So good last week, it’s back again 9. Rhubarb Crumble Tart Strawberry + rhubarb compote, vanilla cremeux, almond crumble 10. Flan Patissier Puff pastry, vanilla custard. Simplicity at its finest. 11. + 12. LAST WEEK FOR QUINCE! GF Vanilla basque cheesecake. Option to add Pedro Ximinez poached quince - for the last time this year as the quince season comes to an end 😢 13. Russian Honey Cake using @beeonethird honey 14. 2025 so far has been a hustle. Non stop production, harvesting, extracting, re-supering, high humidity days (and nights!) and never ending problem solving to get myself and the bees out of the shit. 6 weeks in and I wouldn’t have it any other way. Summer will end in 2 weeks and then onto our Autumn management jobs. LFG 2025!

Watch us Sunday 5:30pm, on @9myway @channel9 today, 17/03/2024! We recently spent a few very valuable days with the 9 My Way production crew, exploring our urban pollination project across rooftops, public parklands and in corporate offices, educating consumers on the importance of bees, both Native and European.
