Gluten Free Chicken & Anathoth Apricot Jam Pizza 🍕 🧡
Turn up your pizza night with this sweet and savoury combo, crispy gluten free bases piled high with juicy chicken, vibrant veggies, and a cheeky hint of apricot sweetness.
Ingredients
* 1 packet Gluten Freedom Fancier Sourdough pizza bases
* Anathoth Apricot jam
* Anathoth Pizza sauce
* Handful of fresh spinach
* Shredded cooked chicken
* 1 red onion, thinly sliced
* 1 red capsicum, sliced
* Pine nuts
* Dairy free cream cheese
* Dairy free shredded cheese
* Spring onion, finely sliced (for garnish)
Method
1. Preheat the oven. Set your oven according to the instructions on your pizza base packet (usually around 200°C / 180°C fan).
2. Prepare the bases. Place the pizza bases on a lined baking tray.
3. Spread the sauces. Start with a layer of pizza sauce.
4. Add the toppings. Evenly distribute the spinach, cheese, shredded chicken, red onion and capsicum, over the base.
5. Creamy layer. Dot the pizza with small spoonfuls of dairy free cream cheese along with dollops of the apricot jam. Add pine nuts for texture.
6. Bake. Cook in the oven for 10–15 minutes, or until the base is crisp and the cheese has melted.
7. Garnish & serve. Remove from the oven, sprinkle with fresh spring onion, slice, and serve warm.
Gluten Free Breakfast Pizza 🍳🍕
Yes, we said it - breakfast pizza! We didn’t realise just how genius this idea was until we made it, and now we’re hooked. It’s the perfect dish for entertaining when you’ve got friends or family staying over, easy, delicious, and a little bit impressive.
What you’ll need:
* 1 packet gluten-free crispy pizza bases
* Pizza sauce (we use @batchmade )
* Grated cheese
* Spinach, roughly chopped
* Bacon, cooked
* Hash bites
* Eggs
* Cherry tomatoes
* Hollandaise sauce (we used @culleys )
* Fresh chives
Method:
1. Preheat your oven according to the pizza base instructions.
2. Spread a generous layer of pizza sauce over each base.
3. Sprinkle over the chopped spinach and a handful of grated cheese.
4. Add the cooked bacon and hash bites evenly across the pizza.
5. Crack the eggs on top and scatter over the cherry tomatoes.
6. Bake for around 10 minutes, or until the egg whites are set but the yolks are still deliciously runny.
7. Remove from the oven and finish with dollops of hollandaise sauce and a sprinkle of fresh chives.
Serve immediately and enjoy—breakfast will never be the same again! ✨

Happy Valentine’s lovers 💘 we hosted a BBQ yesterday for various flat celebrations and I made this chocolate raspberry cake 🎂 I essentially wanted a Matilda reminiscent cake which I think this @butternutbakery recipe achieved (+ added frozen rasps). The fudge frosting with @whittakersnz topped with @batchmade jam was perfect. One of the best chocolate cakes I’ve ever made will be adding this one to the rotation 🍫💝
CHRISTMAS AIR-FRYER-BAKED WAFFLE, serves 1

Have you ever used your Airfryer to make a waffle? This is a game-changer! I bought my waffle mould online (Temu/ AliExpress), and it fits my Airfryer perfectly.
(You could also bake it in the oven, in a waffle-iron, or even in frypan)
½ ripe banana
1 small egg
¼ cup rolled oats
2Tbs bran cereal
10g (about 1tsp) fruit mince (I used Anathoth Berry Fruit Mince @batchmade )
½tsp cinnamon
½tsp ginger
Pinch of nutmeg
¼ cup almond milk
Mash the banana, then mix in remaining ingredients.
Rinse the waffle mould under water so the waffle won't stick, spread mixture evenly into the mould, bake in the Airfryer at 180° for 10 mins.
Flip onto a plate, then carefully peel back the silicone mould.
To shape into a Christmas tree, cut down the grooves so you have 5 pieces. Arrange on a plate with one piece at the top, then the remaining pieces arranged below, as shown in my video. Decorate with strawberry slices and Pomegranate jewels. Dust with icing sugar and serve with a dollop of yoghurt.
Why not make several so you have breakfast for a few days. The waffles will freeze well, and reheat perfectly in the Airfryer or toaster.

The BEST negroni glazed ham recipe you’ll find 😉
The premise of this glaze is pretty simple. Make a negroni, pour it into a pot, add some honey and marmalade — and then make *yourself* a negroni while your mixture simmers into a velvety, citrus-y glaze. Easy peasy.
We always reach for a tub of Anathoth Breakfast Marmalade for this as it’s made with locally grown grapefruit and lemons and hits just the right balance of tart and sweet.
Ingredients
¼ cup gin
¼ cup sweet vermouth
¼ cup Campari
1 cup marmalade
½ cup honey
Finely grated zest of 1 orange (optional)
Method
1. Place all the ingredients, except the orange zest, in a small saucepan over medium-low heat.
2. Mix gently to incorporate the ingredients, and simmer for 8-10 minutes until the glaze begins to thicken. How thick you let it get is largely personal preference, we generally go to ‘coats the back of a spoon’ stage, but some people prefer to let it go longer so you get a thicker coat on your ham.
3. Remove the glaze from the heat and mix in your orange zest, if using.
4. Allow to cool slightly while you prep your ham, and then brush over the ham – including over the sliced face if you have a half ham – before popping it in the oven. Cooking times can be found in our simple ham prep guide post!
5. We usually continue to baste the ham with glaze every 20-30 minutes during cooking to build up a good lacquered finish, and add thinly sliced orange wheels about 20 mins prior to the end of cooking.
Notes:
* This glaze goes especially well if you are cooking your ham in the BBQ – the smokiness of a hooded BBQ adds an extra level of deliciousness… but it is still delightful in the oven.
* This glaze makes enough for a half ham, or Manuka honey leg ham, and you can double it for a whole ham, or halve it for a quarter champagne ham.🥂
