The friendly face behind Terracotta’s cocktail🍹 programme, mixology veteran and Beverage Director @aschmidtstudio . His vision when curating our menu was always to make something interesting that suited the island life, easy-to-drink and sessionable cocktails based on classics, made with the finest boutique spirits and ingredients from Mediterranean regions. Cocktails worth travelling for… with tiny umbrellas. Some of our signatures include the refreshing Terracotta Gin & Tonic, made with the Spanish @xoriguergin , @fevertreemixers Mediterranean Tonic, Amalfi Lemon and Bergamot. The Blood Orange Spritz is another favourite, “it’s an upgraded version of the classic ‘Aperol Spritz’, featuring @malfygin Blood Orange Gin from Italy, Italicus Bergamot, Rosé Vermouth, Grapefruit, Yuzu and a splash of Sparkling Wine.” Adam’s experience within hospitality dates back to his years at the infamous @pdtnyc , then coming to Hong Kong to open @pdthongkong back in 2017. Followed by a short time in Japan, where he worked with his friends at @bar_gyu , Adam then returned back to Hong Kong 🇭🇰 in 2020 to help start our sister venue, @honkytonkstavern alongside @edgafackinrito (#55 Asia’s @50bestbars Extended List 2022 & ‘Campari’s One To Watch’ Bar, #98 Asia’s Top 50 Bars Extended List 2023, #67 Asia’s Top 50 Bars Extended List 2024). Massive congrats to the Shady team and their fearless leaders @theshadyacres on surviving and thriving in this insane year. Since arriving in Hong Kong I was searching for that neighborhood place, where the people were good, the drinks came too quickly, and leaving was a struggle. Thank you for delivering 💛

5 different trains and 2 buses were worth it to reach the “Lamp No Yado” Aoni Onsen. No electric lights, just a collection of 7 baths by a mountain stream. Literal magic

After almost four years in New York and two in Hong Kong, tonight will be my last behind the bar at PDT.
