I’m not actually sure if there is a more quintessential summer flavour palette than raspberry-lemon.
This cake had both. A lightly lemon-flavoured swiss meringue buttercream filled soft airy layers of vanilla cake. Holding it all together was a raspberry coulis and freshly made lemon curd. Tangy, sweet and delicious.

Have you seen Pinocchio? I know it’s a movie from most people’s childhood, but I am not really sure I’ve ever seen it all the way through! I cannot tell you the plot except for he’s a puppet who wants to be a real boy.
But what I can tell you is that my mom played Jiminy Cricket in a stage version of in her childhood. It’s funny how little things stick in your brain and often it’s things related to people you love. ❤️
