Harry from will be sharing some new wines and hosting alongside us at Kirbie, over a three-course long table dinner.
With a focus on classic regions reframed through sustainable viticulture, Harry will have some favourites on the table from producers such as Jerome Blin, Bendito Destino, Cantalapiedra Viticultores, and Tenuta Novella. To pair, we’ll be serving up shared plates of autumn produce in our own generous style.

We went camping in the Otways for a few days with no reception and just one other group on site.
The only things to do were talk, walk, cook and of course have a drink.
The 2023 Cantalapiedra Viticultores Espejo has just landed in Australia for the first time. I had it on the road as a sample the other week and the reaction was very positive.
It’s 100% Verdejo grown on sandy-clay over limestone and calcareous marl at 750m elevation. The vines are 25 years old, planted in 1999 on a 3.6-hectare plot, and are certified organic. Aged in French and Austrian oak, 25% new.
The nose is very neutral and saline at first, with subtle preserved lemon and curry leaf. Pear and peach sit quietly in the background. The palate is creamy yet saline, with a tight, very long finish. Sesame oil, toasted oats, and plain yoghurt lead into a herbal close.

Join me at Osteria Ilaria, one of Melbourne’s most prestigious venues, for a Loire Valley white wine dinner.
We’ll explore Chenin Blanc, Melon de Bourgogne and Sauvignon Blanc from icons like Didier Dagueneau and Nicolas Joly to exciting new-wave producers including Domaine de Bellevue and Terra Vita Vinum. The Loire is making some of the most exciting wines in France right now.
No pretence, just great wine, learning together, and a specially curated menu from the Osteria Ilaria team. I’ll be hosting the night myself.

An old-school Rosé-Clarete style from Canalejas de Peñafiel, blending seven varieties, white and red with Tempranillo, Garnacha, Bobal and Monastrell with Albillo, Pirulés and Alarije. Foot-stomped, basket-pressed, and barrel-fermented.
Deep pink, salmon-hued wine. Aromas of wild strawberry, red currant, and subtle florals, with hints of herbs and earth. The palate is textured and fresh, showing raspberry, cranberry, and citrus zest, supported by lively acidity, gentle creaminess from seven months on fine lees, and notes of spice and smokiness. Long, tense, and balanced, combining richness with sharp freshness.
We drove from Italy into Austria and somehow ended up in Champagne visiting @champagnejeromeblin — keep an eye out Australia, Another Bottle has something cooking for next year.
A few days in Paris followed. Friends, food, wine… hard to beat.
Then on to Burgundy. First stop Domaine Lafarge some of the best wines coming out of Volnay. Absolutely magic. And honestly, don’t sleep on the Beaujolais.
Next day was Mikulski with a brilliant tasting and lunch across the road at Le Soufflot, where François was quietly dining behind us. Great wines, great energy, wow.
The following day brought some of the most elegant, pure reds at Camile Thiriet. Truly beautiful wines, Camile is doing some of the most exciting work in Burgundy right now. Elegance and finesse!
On the drive to Jura, a quick stop at Domaine Dujac to taste the ’23s, plus a surprise blind pour of a 1999 Gevrey-Chambertin Combottes. Thank you.
Final stop of the trip, and the only Jura visit this time: sleepy Arbois-Pupillin with Cellier Saint Benoit tasting ’23s and ’22s. Those Ploussards are seriously next level.
All up, a magic and inspiring trip, spending time with some of the sharpest minds in wine. Huge thanks to everyone who welcomed us, tasted with us, and shared their stories. Feeling very humbled, and grateful to be part of this industry.
I’m back in Melbourne town next February, so I’m in dire need of drinking some wines from the Jura. I travelled to Jura at the start of October 2025, and it blew me away. It was relaxed, friendly, and inclusive, and there was always a winemaker around the bar in good venues in town.
Come join me in drinking arguably the most famous name in Jura, Domaine Bénédicte et Stéphane Tissot.
Domaine Bénédicte et Stéphane Tissot was founded in the 1960s by André and Mireille Tissot in Arbois, the heart of France’s Jura region. Today, it’s run by their son Stéphane Tissot and his wife Bénédicte, who have transformed it into one of the Jura’s benchmark estates.
The Domaine now covers around 50 hectares, all farmed biodynamically since 2004, making it one of the largest certified biodynamic estates in France. The vineyards are spread across diverse terroirs of limestone, clay, and marl, soil diversity at its best.
The dinner will be hosted by myself, pairing with wines from Tissot with a special menu at Sleepy's Cafe & Wine Bar.

Rare plot of 100+ year-old goblet-trained Albillo vines in Baños de Valdearados. In 2022, Bendito Destino produced just two barrels of Albillo, a wine with exceptional density, vibrant acidity, and a low pH of 3.12, offering elegance and power.
Planted in 1910, the single-vineyard on limestone soil at 920 meters altitude. Spanning only 0.3 hectares.
Low alcohol of 12.8% and Meursault meet Tonondia blanco in style. Nutty, salty, lemon curd, delightful.
2022 Bendito Destino Navazal Clarete Rose
Only 36 bottles made it into Australia
This Clarete comes from a vineyard owned by Secundino, a 92-year-old legend in Canalejas de Peñafiel who has shared his wisdom and knowledge of traditional winemaking.
A blend of Albillo, Tempranillo, Alarije, and Bobal, it underwent full malolactic fermentation and aged for two years in a used 500-liter barrel, capturing the essence of a bygone era. This is the winery’s finest Clarete yet, honoring tradition and history.
Think more like a structured chilled red rather than a rose, earthy, rich red fruits and power!

Perched 550 meters above sea level in the rolling hills of Chianti Classico, Tenuta La Novella, is a breathtaking estate farmed biodynamically since 2015.
This 100% Sangiovese IGT comes from 23-year-old vines rooted in limestone and schist. Aged 18 months in ceramic jars (no oak!), it shows vibrant red berries, elegant tannins, and a whisper of earthy minerality. Bright, pure, and full of life, new wave Sangiovese at it’s best.

2022 Bendito Destino Amphora
From a tiny 0.31ha vineyard planted in 1920, Fuentecebolla is one of Bendito Destino’s most treasured plots. The blend is 80% Tempranillo, 10% Garnacha, 10% white grapes.
Harvested at night to retain the freshness, Terry moved away from oak and raised this vintage in amphora. The mix of whole bunches and hand-destemmed fruit, with gentle daily punch-downs, led to a long 41-day ferment before pressing. The result? A wine of energy, bottled after 24 months with only one racking.
Brightly pure red and black fruits layered with spice, a touch of earth, and fine mouth-watering tannins. There’s a real freshness and purity, with a lot of depth. Structure, finesse, delicious.
