“Which part of the land, the people, the food, and the culture truly speaks of Taiwan 🇹🇼? And how do we tell those stories?” These are the questions we ask ourselves every year when we begin imagining our Lunar New Year creation. This year, we are truly honoured to collaborate with @kasamachocolate and @annbiguity to bring you Year of the Horse - a very special chocolate bar made with pineapple biscuits and Taiwanese Maqaw pepper. Maqaw (馬告), also known as “Makauy” in the Atayal language, is a treasured spice that has been used by Indigenous communities in Taiwan for hundreds of years. Often called Taiwan mountain pepper, it’s prized for its bright, aromatic character, with layered notes of lemongrass, ginger, and citrus that create a lively, uplifting finish. Traditionally, Maqaw is used as a marinade and in grilled meats or soups, bringing depth and warmth to everyday dishes. So how do we capture the essence of Taiwan’s terroir in chocolate? It began with exploring the possibilities between Maqaw pepper and pineapple — fine-tuning the balance between spice and chocolate, cooking pineapple jam from scratch, and going through many trials to develop a plant-based biscuit that truly screams “pineapple!” Through this shared process, we joined forces to create a tasting journey that connects the Philippines and Taiwan, one bite at a time. 🐍蛇來運轉🌊 Why are we hiding behind pomelo and kelp? Because we can’t wait to share this special collaboration between @kasamachocolate , @yishicacao , and Vancouver-based artist @annbiguity ! To celebrate the Year of the Snake, we’ve created a jade-colored white chocolate made with Haida Gwaii giant kelp, blue spirulina, ceremonial matcha, and candied Asian pomelo zest. The umami-rich kelp and toasty spirulina add a savoury depth, while bright, citrusy pomelo zest refreshes your palate—bringing together an irresistibly balanced yet addictive sweet-salty bite. Shout out to my mom for the hand written calligraphy 🖋️ 📸 Photo Credit and Repost from @kasamachocolate : In celebration of the Year of the Snake, we collaborated with Olivia Wu from @yishicacao to bring you this special jade-coloured white chocolate bar made with giant kelp from the pacific coastal waters of Haida Gwaii in BC, blue spirulina, and a ceremonial matcha from Yame Fukuoka, Japan. Snake-shaped strands of candied Asian pomelo – an auspicious fruit this time of the year – adorn the back of the bar and add a bright citrusy tang to the rich umami flavour of this special Lunar New Year release. The Chinese calligraphy greeting 蛇來運轉 translates to:
“The Serpent arrives and fortune shifts. KASAMA Chocolate X NOISETTE BY OLIVIA present Year of the Dragon - Dalandan Milk Chocolate with Buzzed Ginger Longan 龍眼 Biscuit How did we make the biscuit? Starting with longan fruit sourced from Dongshan district in Tainan, Taiwan 🇹🇼 where they are kiln roasted and smoked for several days by longan farmers using an ancient technique. After removing the thin, bark-like crisp shell, we saved the longan shell, infused it in butter for 24 hours, caramelized the butter, and add a splash of Shaoxing wine. This process adds a layer of smokiness to the biscuits. What about the dried longan fruit? It gets a dreamy soak in the Shaoxing wine! We carefully chopped the biscuit into smaller bits, sprinkled them into 55% dark milk chocolate made with cacao from Davao de Oro 🇵🇭 and infused with Philippine Dalandan (Philippine orange). It is a creamy chocolate bar with crunchy, layered texture and notes of citrus, ginger, smoke and pepper that you will find yourself keeping on coming back for another bite! 🐉 龍躍金山 ⛰️ From deep in the fiery caverns of the Kasama Chocolate forges, a dragon has awakened. In celebration of Lunar New Year - The Year of the Dragon - we collaborated with @noisettebyolivia to bring you this special limited release chocolate bar made with a biscuit inspired by a hot ginger and smoked longan drink made by Olivia’s mom - Mama Wu in Taiwan 🇹🇼. Longan (龍眼), also known as “Dragon’s Eye”, is a tropical fruit found throughout Asia and is prized for its sweet flesh & floral aroma, similar to that of lychee. When de-shelled, the fruit resembles the eye of a dragon. The longan used in the biscuit were sourced directly from Dongshan district in Tainan where they are kiln roasted and smoked for several days by longan farmers living in the mountains using an ancient technique. Soaked in Shoaxing Wine, the longan is combined with ginger and black peppercorn. Bits of Buzzed Ginger Longan biscuit are sprinkled into a 55% dark milk chocolate made with cacao from Davao de Oro 🇵🇭 and infused with Dalandan (Philippine Orange) resulting in a creamy chocolate bar with a crunchy texture and notes of citrus, ginger, smoke and pepper. The artwork for this year’s special wrapper design was illustrated by Vancouver-based artist Ann Liao @annbiguity . The greeting & calligraphy 龍躍金山 - May your abundance and prosperity flourish & soar in the Year of the Dragon - was created in Taiwan by Auntie Liao. During last Christmas, I had the pleasure of working with Olivia and customized these adorable hazelnut and cookie line pattern for her brand. I also realized it’s too adorable to be just printed on paper goods. This bright lemony sunflower yellow brings a smile to my face and I’m sure it’s the same feeling when people tastes Olivia’s cookies made with real heart and ingredients. If 2021’s theme was to ease into a pandemic normal, then 2022's motto is definitely to show up in the world with a vitality never seen before. The year of the tiger is all about barging through with an aggressive fury. The expressive line work on the tiger and bold pineapple skin pattern backdrop is meant to channel that vigor and assertiveness. The fluid-like wind or “qi” representation juxtaposed with a traditional Chinese typeface really captures the spirit of the tiger. Wishing everyone an auspicious Lunar New Year!
