One of China’s Eight Great Cuisines, Xiang Cuisine is famous for its explosive sour, spicy, fresh, and fragrant flavors.
It’s mainly divided into three styles: Xiang River, Dongting Lake, and Western Hunan.
Because Hunan is hot and extremely humid, locals love heavy sour and spicy flavors to chase away dampness while keeping the ingredients tasting fresh.
Chopped chilies, pickled chilies, cured meats, and smoked ingredients are everywhere. Every dish is intense in color and flavor!
