Last week, Chef Alan Sanz (@alansanz ) and Bartender Max Reis (@beerghost ) opened the doors at Mirate (@mirate.losangeles ) to host an Industry Brunch with TCHO Chocolate (@tchochocolate ), gathering Los Angeles peers around the table for a morning of good food, good people, and good conversation. Sanz threaded six TCHO products across the menu, building cocoa into every course: a cocoa powder cure on the wagyu tartare, dark chocolate in his signature huitlacoche, dark chocolate in a salsa borracha for lamb barbacoa flautas, and an oat milk chocolate crémeux paired with prickly pear granita. Reis joined in the fun with his tequila-mezcal paleta pop with cocoa nibs. Thank you to Team Mirate, TCHO, and to everyone who came out. Mornings like this are what this industry is all about.
