Annie is a chef and writer from Florida, now based in Queens. She’s held various roles in food and hospitality for over a decade, from cooking on the line to managing special projects and menu development. Since 2023, she has worked in whole-animal butchery. Her Pretend Restaurant menu is a tangy, savory, and comforting interpretation of Chinese-Hainanese cuisine, featuring ingredients lovingly hand-carried back to New York. There will be vegan/vegetarian options!

I visited a 农村poultry farm run by a family friend to learn more about Hainanese chicken-rearing, slaughter, and cookery. gorgeously yellow chicken fat, QQ skin, tender in flesh and a little sweet.
