The most incredible journey is coming to an end on the 20th of December @silolondon 🖤 To all friends, family, and guests please come and visit this magical restaurant one last time 🕰️ I walked through the doors of Silo coming up to 4 years ago. Just over two years ago I was given the absolute privilege of leading @silolondon by @mcmasterchef . It has truly been the greatest honour to do this alongside my partner in crime @moonherelee 🖤 (10 books aren’t enough to describe how remarkable Moon is) @mcmasterchef vision is simple, to take responsibility when no one else is willing. Always take the path with the most resistance, ensure everything on the plate and in the dining room is bettering nature, the team and the hands who cultivate them. When most our finished with it, make sure to give it another beautiful life. Doug is the most incredible leader, artist, friend. A radical visionary unlike anyone I have ever met before 🖤 Finally and most importantly the team of truly beautiful individuals I have worked with, thank you for making my life so fulfilled over the last few years. Words can never describe how proud I am of the growth of the chefs and FOH team I have had the privilege of leading. Every service, every day, you have given everything. Everyone single one of them have and will go on to achieve remarkable things 🙏🖤 One final shout out to the amazing @lornahale92 . The most incredible human who has run the FOH team over the last year and a half, she is a remarkable human being that I’m blessed to call a friend 🖤

Such a fun week in week in Jerez. We managed to make new friends, drink lots of sherry, and eat far too much. During this week @zoednd managed to win the most creative pairing and get into @harpers_wine_spirit 30 under. If anyone doesn’t know she’s pretty cool. I somehow won the best chef, competing and watching the 7 other countries was absolutely incredible experience. All the teams were incredible and was absolutely beautiful to share stories with and drink far too much with. Thank you to everyone who made the Copa Jerez possible @sherrywinesjerez Showcasing both @zoednd shared philosophy, was so much fun. Thank you @pottersthumb @shrub.london @flourishproduce without plates and food a chef doesn’t go very far. Thank you for working so hard on brining incredible visions and products to life and allowing me to use them. I can’t even take credit for all the food creation for that I always have to thank my incredible team at @silolondon @mcmasterchef @moonherelee @steeze_en_place @_tacoroma @gabythinksitfood @chrsapula @lornahale92 @uiiba.club @ar_rete They drive us forward every day and from that I learn so much 🖤 @melero.helena saved my life and became Spains finest Amazake and miso dealer she’s a total legend 🖤

What an Evening @gislimatt X @silolondon We were lucky enough to have one of the most creative chefs on the planet join us for one night only at @silolondon 🪐 Turning a commonly unused Cod head into three world class dishes! Apart from the incredible dishes he brought to the restaurant, it was the kindness and friendship which showed above all to the team! Sharing memories and the desire for the industry to change, having fun, serving beautiful food. It was one of the most incredible services to be apart of! Copa Jerez 2024 🇬🇧 It’s my first national award and @zoednd third in 5 months, so thank you for carrying us, working so hard, creating the most incredible pairings and making sure we did every preparation possible. As always there is a team of incredible suppliers who support me and @silolondon every day, @johalind @car_y_mor @flourishproduce @raybelcharters @silolondon @shrub.london @theseathesea_ thank you for making sure I was able to use the best produce the UK has to offer.
