A little lemony, spicy ‘nduja and sausage pasta with mascarpone and spinach. Easy to make, and bold in flavour.
Deskin some sausages, fry them in oil and crush with a spatula after some colour shows. Then add some ‘nduja, garlic, lemon juice and zest, mascarpone and finally some spinach. Serve with parmigiano and black pepper. Enjoy!

A not so French - read: no butter was used - take on a Coq au Vin Blanc with parsnips and carrots, that I recently made for @vinnatuur . Finished off with tarragon and course Dijon mustard, served with a smooth crème fraîche potato purée.

I must’ve been 6 years old when I almost fainted from smelling the intense aromas of our local North African shop Le Souk in Groningen. Since then, I’ve had a slight obsession with flavours and smells, and have cooked for bigger and bigger groups. I love messy, colourful, rustic cooking and on this page I’ll dump some of my favourite dishes, either made at home to feed my girlfriend, or at work at @vinnatuur for one of our wine tastings or pop-ups.
