Have you ever thought about what happens to the oyster shells after you finish them at your local raw bar? š¦Ŗ
We went behind the scenes with one of Charlestonās favorites, 167 Raw, to see where they end up. On a busy lunch shift alone, they can go through around 500 oysters. Thatās a lot of shells.
Instead of tossing them in the trash, the shells are collected through the SCORE program. Restaurants like 167 Raw partner with the program and have their used shells picked up a couple times a week so they can be recycled.
Those shells donāt go to waste. Theyāre used to help build new oyster reefs, giving baby oysters a place to attach and grow. Without recycled shells, building these reefs simply wouldnāt be possible.
One plate of oysters can end up helping build the next reef. šš¦Ŗ
