"Inspired by the precision of Japanese rice lager and the concept of “pint after pint”, this lager is crafted for ultimate drinkability with a complex twist.
We extracted live yeast from unpasteurized, hazy sake, propagating it with rice, malt, and koji to bridge the gap between two ancient traditions.
Following a two-stage fermentation, starting with a higher temperature sake fermentation and finishing cold, a lager fermentation for crispness, we’ve created a beer that is incredibly lean, refreshing and with a subtle sake aroma.
Expect a pale straw pour with delicate notes of fruity sake characters and a whisper of traditional German hops.
Clean, dry, and built for the next round."

🍻喺少爺負責咩崗位?
What is your role at Young Master?
大約2年前加入少爺,依家係少爺嘅首席釀酒師,主要負責監控釀酒過程同新酒研發,每日嘅工作係確保啤酒發酵順利同好飲!
I joined Young Master about 2 years ago and now I'm working as the head brewer, in charge of brewing, cellaring and R&D. My daily tasks involve making sure the beers are fermenting well and more importantly, tasting good.
🍻加入少爺之前,你本身係做咩?
What did you do before joining Young Master?
一開始喺元老級啤酒吧Roundhouse做兼職,之後分別加入Citibrew同Carbon酒廠參與唔同崗位,無論係裝罐定係釀酒都有涉獵。
I started my career with part-timing at Roundhouse, the OG craft beer bar as a bartender. Then worked at Citibrew and Carbon Brews in different positions from packaging technician to brewer.

How did you get into beer?
朋友介紹下喺The Oak Crafted (依家叫Hands)第一次接觸同愛上咗啤酒,之後一直自學釀酒同搵啤酒相關嘅工作。透過釀酒教科書同Google學習基本知識,呢個自學過程亦都教會我突破傳統啤酒嘅風格限制。
Fell in love with beers at a bar named The Oak Crafted (Hands). Since then I studied by myself about brewing and seeked for a beer related job. Brew books and Google were my partners for learning the fundamentals, and it taught me how to think beyond beer limits and styles.
