Healthy Recipe: Saffron Orzo with Shrimp and Sugar Snap Peas

Although this delicious and colorful one-pot meal is quick to make, it is fancy enough for entertaining.
Serves 4

Ingredients
Β½ yellow onions, chopped
3 cloves garlic, minced
2 tsp. olive oil1 tsp. saffron threads
1 Β½ cups orzo
2 ΒΌ cups low-sodium chicken broth, more if needed
Β½ lb. asparagus, stems removed and cut into 1-inch pieces
Β½ lb. sugar snap peas, trimmed
Β½ lb. shrimp (prawns), peeled, deveined, and cut cross-wise into thirds
Salt & pepper to taste

1. Heat a large saucepan over medium heat. Add the onion, garlic, olive oil, and saffron threads and sautΓ© until soft, about 5 minutes. Mix in the orzo, then pour in the broth. Bring to a boil, cover, reduce the heat to low, and cook, stirring occasionally, until the orzo is just tender, about 8 minutes.

2. Add the asparagus and peas and simmer until partially cooked, about 3 minutes. Add the shrimp and cook until opaque, about 4 min. Β Or you can cook shrimp in air fryer. Β Season with salt and pepper.
