@yip.360 Raffle Challenge is FINISHED! We raised a total of: $3,561.29 for Autism Charities! I want to thank everyone who participated in this event and helped raise money for such a great cause. I am very grateful that we were able to raise money for Autism research and keep Calvin's memory as a positive feeling through this challenge. The RAFFLE WINNER is: LINDA WAH! @linda.s.wah She recieved 1 month of free classes! We collected over 60 healthy recipes and healthy activity ideas! Healthy Recipe: Saffron Orzo with Shrimp and Sugar Snap Peas Β  Although this delicious and colorful one-pot meal is quick to make, it is fancy enough for entertaining. Serves 4 Β  Ingredients Β½ yellow onions, chopped 3 cloves garlic, minced 2 tsp. olive oil1 tsp. saffron threads 1 Β½ cups orzo 2 ΒΌ cups low-sodium chicken broth, more if needed Β½ lb. asparagus, stems removed and cut into 1-inch pieces Β½ lb. sugar snap peas, trimmed Β½ lb. shrimp (prawns), peeled, deveined, and cut cross-wise into thirds Salt & pepper to taste Β  Β  1. Heat a large saucepan over medium heat. Add the onion, garlic, olive oil, and saffron threads and sautΓ© until soft, about 5 minutes. Mix in the orzo, then pour in the broth. Bring to a boil, cover, reduce the heat to low, and cook, stirring occasionally, until the orzo is just tender, about 8 minutes. Β  2. Add the asparagus and peas and simmer until partially cooked, about 3 minutes. Add the shrimp and cook until opaque, about 4 min. Β Or you can cook shrimp in air fryer. Quinoa salad: Here is a tasty salad that may be a side or a main. We had it for dinner tonight with a little sautΓ©ed chicken but any desired extra protein may be added, ie salmon. -Quinoa 1/2 cup uncooked -1/2 cup garbanzo beans, rinsed & drained -1/2 green onion, diced, -8or so grapes cut in half -1 TBS feta cheese -1+ TBS apple cider vinegar to taste -2+ TBS lemon juice to taste 1/4 garlic clove grated or minced -1/4 tsp olive oil -black pepper , salt and dill weed to taste . Method: Cook quinoa and set aside to cool. Add other listed ingredients, mix well and let flavors blend for 15+ minutes before serving. @mariadeej is participating in the @yip.360 raffle created by @yipfitness , money raised will go to autism charities as a tribute to Stacy’s autistic brother, Calvin Yip.​​​​​​​​ ​​​​​​​​ Maria De Jesu's Healthy Recipe: Pasta with Seafood, A bowl of comfort​​​​​​​​ ​​​​​​​​ Ingredients:​​​​​​​​ 1.5 tsp olive oil​​​​​​​​ 1 garlic clove, minced​​​​​​​​ Salt 1/8 tsp or to taste​​​​​​​​ White wine 2 Tbs​​​​​​​​ Lemon juice 1 tsp or more​​​​​​​​ Capers 1 tsp, whole or mashed​​​​​​​​ TJ’s Seafood Blend 110gm, thawed​​​​​​​​ Dash each chili pepper flakes and oregano​​​​​​​​ Capellini pasta 56 gm​​​​​​​​ ​​​​​​​​ Method:​​​​​​​​ Cook pasta in salted water.​​​​​​​​ Heat olive oil and heat garlic til aromatic.​​​​​​​​ Add seafood, lemon juice, wine and capers. Cook gently til shrimp is pink.
