Master Sommelier Yang LU had a conversation with Richard Geoffroy, a titan in the champagne world. This master winemaker, who helmed Dom Pérignon, the king of champagnes, for over two decades, made a decision that stunned the industry in his 60s—he crossed over into the world of sake and founded IWA Iwago 5.
He put forward the subversive view that “the brewing difficulty of sake far exceeds that of wine,” which caused an earthquake in the wine circle and even led to him being criticized for betraying the industry. In the Japanese sake world that adheres to ancient methods, as an outsider, he brought in new thinking. Some people were looking forward to it, but he was also questioned by traditionalists.
