Where stainless steel tanks are tidy and predictable, fermenting in wood is messy, labour-intensive and capricious
The frothing krausen from this Bordeaux barrel fermented saison means another day of mopping, and reevaluating my choices in life π
In the latest of our ongoing series, βnicely made examples of commercially unpopular beer stylesβ, may we present CHERISH - a Belgian IPA
Is it a bit niche? Yes. But does it taste like marmalade on toast? Also yes!
Malty marmalade sweetness and old school bitterness. Brewed with Belgian pilsner malt, traditional Belgian yeast and a hefty amount of Amarillo, Centennial and Cascade

Most breweries are defined by stainless steel tanks and shiny kettles. But if weβre being honest, the actual heart of our operation is right here. This stack of used wine barrels is where our best (and worst) ideas go to hide for years on end.
We lean heavily on used Bordeaux barrels, which bring a beautiful mild funk with them from their previous life, but we also have Tempranillo, Sherry and Bourbon barrels as part of the stable.
Brewers make wort, but yeast makes beer.
We're growing up some fresh Belgian Ardennes yeast for a lightly funky dark mild we'll be releasing soon

As you may know, our lovely @helenannesmith is leaving us soon, mainly because this post has been uploaded twice by accident... third times a charm!
Helen has been an absolute joy to work with - always positive, full of ideas, constructive and willing to take on any task. They've transformed the whole business here, from what we make to how we brand it, and how we present ourselves to the world.
I feel so lucky to have had the chance to work alongside Helen and will forever be indebted to them for making the last few years so much brighter.
If you're looking for someone to elevate your food & drink business - you genuinely couldn't do better!
Our golden ale sold so well last year that we decided we should brew it again π
All casks have already been nabbed but we have a bunch of cans available via our webshop and @sellar.io trade store π₯°π
This also means our Rise/Fall mixed cases are back online x
Events season is finally here, we have a couple of things booked into the diary already. A mix of new events we haven't done before, and some of our favourites!
We'll be in Portmerion on Monday, pouring at the @blasarfwyd trade show. Then later this week Helen will be doing a talk at the annual UK cider convention hosted by @3ccpa ππΎ
Then in April we'll be in Reading pouring beer at @stagecraftfestival ran by our pals at @dolphinbrewery π¬
We are thrilled to say our beers will be on at @fynefest26 in May! This festival is a favourite among brewers and beer fans, and we're very proud to have our beers being poured up in a beautiful part of the world πΈ
And of course, we'll be at our favourite festival by @littleearthproject in early July.
Any extra events along the way we will signpost on our stories, and in our newsletter!

For the past three years we have had the absolute joy of working with Sophie Potter on the labels for all of our bottles, cans, keg and cask badges.
Through her work SP has helped communicate who we are with all of you! Her beautiful designs have placed us on shelves alongside some of the best wild breweries around the world, and for that we are eternally grateful.
Sophie is now moving onto new projects, which means that things will start to look a bit different at Wilderness. We'll be in a bit of a transition period while we begin work with a new illustrator. This won't be a total rebrand, we'll still be working with Sophie's designs for beers previously brewed, and a few that are still unreleased, but it will be a new chapter for us visually.
A huge HUGE thank you to Sophie Potter for all of her work over the years, we wouldn't be where we are now without her ability to translate our beers into art. Diolch yn fawr queen!
Make sure you follow Sophie at @sophiepotterco to keep up with all her beautiful projects πΈ
