📣NEW 📣 Zero Hero: Low / Non Alcoholic Dry Yeast
Zero Hero is a yeast strain of Torulaspora delbrueckii, selected specifically for its highly restrained fermentation performance for the production of non alcoholic beers.
This strain is maltose and maltotriose negative, meaning it is unable to metabolize maltose. As a result, attenuation remains extremely low and therefore alcohol production is minimal, making it particularly well-suited for non-alcoholic and ultra-low alcohol beer applications.
Despite its limited sugar metabolism, Zero Hero contributes a clean and balanced sensory profile. It supports subtle yeast-derived complexity without generating excessive esters, phenols, or off-flavours, allowing the raw materials and process design to remain at the forefront. The restrained fermentation activity also helps preserve body and residual sweetness, which can be advantageous in maintaining mouthfeel in alcohol-free formulations.
Due to the low level of attenuation and residual fermentable sugars remaining in the finished product, pasteurisation is required to ensure microbiological stability and prevent refermentation in package.

CERVEZA CAMPEÓN – MEXICAN LAGER YEAST IS HERE 🇲🇽
Fresh in from WHC and we’re all feeling a little excited to brew with it… In fact, we're going to brew with it tomorrow!
A proper Mexican lager strain built for clean, crisp, easy-drinking. Light body, soft malt character, and that dry finish that keeps things moving. Right at home in a classic Mexican lager - with or without a wedge of lime!
Best results come from running it in that traditional lager window, 10 to 14°C, with a healthy pitch around 1 to 1.5g per litre. Give it that and it will tick along nicely, clear well, and leave you with a bright, clean and polished beer.
If you made it to BeerX, you might have been lucky enough to try the Mexican Lager we had pouring there, which featured this yeast - and it was delicious!
Perfect for getting a few kegs lined up ahead of the World Cup. The kind of beer you can pour pint after pint without thinking twice.
Drink it as is, add a wedge of lime if that is your thing, or build you recipe with a light touch of Motueka at the end of the boil and get those limey notes in a rounded way and skip the acidity of real limes!
