@westinyvr has introduced new dishes inspired by West Coast flavours, with a focus on ingredients from local farmers, growers, and fishers. Here are some new items to try.

Mains
- Pacific Salmon, moist and tender. Steelhead with sake kasu, miso butter, confit fennel, fingerling potatoes, and prepared en papillote.
- Pork Tomahawk, savoury with a touch of heat. A 12-ounce chop with tamari and chilli emulsion, watercress, and yuzu vinaigrette.
- Half Chicken, tender and comforting. Slow-roasted sake-marinated chicken with charred lemon and truffle chasseur sauce.
Starters & Sides
- Burrata, creamy and seasonal. Garden-selected harvest with seasonal stone fruit, sesame, miso vinaigrette, and crostini.
- Broccolini, charred and savoury. Broccolini with parmesan and salted egg yolk.
- Foraged Mushrooms, earthy and satisfying. Local mushrooms with miso butter, yuzu, and crushed almonds.
Drinks
- Dirty Little Caesar. A briny Caesar-style cocktail with an oyster finish.
- Indigo Giggles, fragrant and playful. A juicy cocktail that shifted as I sipped.
- Razzle Dazzle, fizzy and citrusy. A lively drink with a soft berry finish.
Dessert
- Clafoutis Tart, fruity and soft. Peach, raspberry, and chantilly.
- Chocolate Decadence, rich and smooth. 56% couverture with ganache.
- New York Cheesecake, classic and familiar. Graham crust with berry compote.
