和歌山県由良町・衣奈。海を望む静かな集落に、バーガーショップ「Fitam」がある。
店名の由来は、スウェーデン語の「Fika」。コーヒーを囲みながら会話を楽しむ時間という意味を持つ言葉に、店主・田村さんの名前を重ねて生まれた名前だ。
大学卒業後、特別支援学校の教師として働いていた田村さん。体調を崩したことをきっかけに飲食の世界へ入り、Baloricco、Golden River、No.11（ヌメロオンセ）といった店で経験を重ねながら、少しずつ自分のスタイルを形にしていった。
その後、大阪でGakuya Burgerとの出会いが転機となる。空間づくりや接客、お客さんとの距離感、そしてバーガーの味。そのすべてに強く影響を受けたことが、自身の店づくりにつながっていった。
Fitamのバーガーは、合挽きのパティに和牛の脂を加え、甘さにこだわった国産小麦のオリジナルバンズと合わせて仕上げている。目指しているのは、食べ終わったあとに「もう一個食べたい」と思えるハンバーガーだ。
この店には、県外からわざわざ訪れる人も多い。
田村さんはこの場所を、人と人がつながる“フィルター”のような存在でありたいと話す。
そして
衣奈という地名をもっと多くの人に知ってもらうこと。海と自然のそばで食べる時間を届けることを信条としている。

In this quiet coastal community overlooking the sea stands a hamburger shop called Fitam.
The name comes from the Swedish word Fika — a cultural moment of sharing coffee and conversation. Combined with the owner Tamura’s name, the shop became Fitam, a place shaped around time, connection, and people.
After graduating from university, Tamura first worked as a teacher at a special needs school.
Later, after experiencing a difficult period in his life, he stepped into the world of food and hospitality. He began working at Baloricco, followed by Golden River and No.11, where he gradually developed his own approach.
A turning point came when he encountered Gakuya Burger in Osaka.
The atmosphere of the space, the way staff and customers interacted, and of course the taste of the burgers deeply influenced him and shaped the kind of place he wanted to create himself.
Fitam’s burgers are made with a blended beef patty enriched with wagyu fat, paired with a sweet original bun made from domestic wheat.
His goal is simple — a burger that makes you want another one even after finishing the first.
Today, many visitors travel from outside the prefecture just to visit this small shop in Ina.
Tamura hopes the restaurant can become a kind of “filter” that connects people — a place where conversations begin and relationships grow.
Through burgers, he continues to share the name and landscape of Ina with more people beyond the region.
Here by the sea, another burger is being prepared today.
