In the kitchen with Farmer Luke 👨🌾🎄 He’s whipped up the ultimate Christmas trifle using our creamy Gippsland Jersey unhomogenised milk for the custard and our pouring cream on top – it’s simple, nostalgic and SO delicious. A total crowd pleaser for the Christmas table. Will you be making this for Christmas Day? 🎅💛
RECIPE: FARMER LUKE’S GJ CHRISTMAS TRIFLE 👇
YOU’LL NEED:
1 packet jelly, made and set in a trifle dish
Sponge cake or jam roll, chopped into chunks
Optional: a splash of Cointreau (totally up to you 😉)
2–3 cups mixed berries (fresh or frozen, defrosted)
1 batch Gippsland Jersey custard (recipe below)
300ml Gippsland Jersey pouring cream, whipped
TO ASSEMBLE:
1️⃣ Once your jelly is set, add a layer of sponge cake over the top (you can drizzle with Cointreau if using).
2️⃣ Pour over a generous layer of your GJ custard.
3️⃣ Add another layer of sponge cake.
4️⃣ Scatter over your berries.
5️⃣ Top with a big cloud of whipped Gippsland Jersey cream.
6️⃣ Finish with more berries on top. Keep chilled until serving.
GIPPSLAND JERSEY THERMOMIX CUSTARD
Ingredients:
500ml Gippsland Jersey unhomogenised milk
50ml Gippsland Jersey pouring cream (for extra richness)
4 egg yolks
70g sugar
30g cornflour
1 tsp vanilla extract
Thermomix method:
1️⃣ Add all ingredients to the Thermomix bowl.
2️⃣ Mix 10 seconds / speed 4 to combine.
3️⃣ Cook 7–9 minutes / 90°C / speed 4, until thick and silky.
4️⃣ Pour into a bowl or jug, press cling wrap directly onto the surface to prevent a skin forming, then cool completely before layering in your trifle.

We survived Sunday night and it's destructive wind. This small shed did not. Thankfully it missed our grain auger by just centimeters!! Power still.out, but hey, we are used to that down here. Hope everyone who copped it on Sunday and Monday is safe!
Farmers Celebrate being the producers of Australia’s BEST ‘real’ Milk!
Gippsland Jersey, had been crowned for producing the best ‘real’ milk in Australia. The prestigious award was won on Friday night, and today we had the pleasure of show & tell with the trophies to some of our dairy farmers who made it possible.
This remarkable achievement is a testament to the hard work and dedication of our farmers, who consistently produce top-quality jersey milk by ensuring the well-being of their cows and the sustainability of their farms are their uttermost priority.
Our small family business journey, has been filled with numerous challenges and triumphs over the past 8 years. This recent accolade means A-LOT to us 🇦🇺🤩🥛
Gippsland Jersey has been honored with Gold medals for all our milk varieties: Full Cream, Light, and Unhomogenised, in addition to Gold for our Golden Ghee. We also won Silver medals for our Cultured Sour Cream and Unsalted Butter.
Unfortunately, there was a minor mishap with one of the glass trophies today #whoops 😫😢 #shattered
A special shoutout to Trav from @southbrewcafe for giving farmer Luke the opportunity to hone his barista skills using Gippsland Jersey milk behind the coffee machine. Last week, Trav and Luke teamed up at our on-farm barista day and emerged victorious, winning the trophy 🏆
