🥜 Peanut Butter & Jelly Ice Cream Sandwiches
Ingredients
• ½ cup peanut butter (creamy no added sugar)
• ¼ cup grass-fed butter (or melted coconut oil)
• ½ cup + 2 tbsp maple syrup or honey
• 2 tsp vanilla extract
• 1¾ cups gluten-free 1:1 flour
• 1 pint strawberry ice cream
Optional toppings: melted dark chocolate, crushed peanuts or freeze-dried strawberry pieces
🍓 Instructions
1️⃣ Make the peanut butter cookie layer
Line a 10”x15” rimmed baking sheet with parchment paper.
In a bowl whisk together peanut butter, melted butter, maple syrup and vanilla until smooth.
Stir in gluten-free flour (and a pinch of salt if desired) until a dough forms.
Press dough into a ¼-inch thick rectangle on the baking sheet. Freeze for at least 40 minutes.
2️⃣ Assemble
Cut the frozen cookie layer in half.
Spread strawberry ice cream evenly over one half then place the second half on top to form a sandwich.
3️⃣ Freeze
Freeze for at least 2 hours or until firm.
4️⃣ Slice & serve
Cut into bars or squares. Add toppings if desired and enjoy.

Made with creamy yogurt, ripe banana and @Alohamoment Vanilla Protein for a smooth, satisfying treat
What you’ll need:
• 3–4 scoops @alohamoment Vanilla Protein Powder
• 1½ cups unsweetened Greek yogurt (or coconut yogurt)
• 1 ripe banana
Toppings:
• Crushed wafer cookies
• Whipped cream
• Sliced banana
Directions:
Blend protein powder, yogurt and banana until smooth
Portion into 4 bowls, cover and chill 1–6 hours
Top with cookies, whipped cream and banana
