Itâs a special weekend when you can pour @hiyuwinefarm âs Aura by the glass alongside some other big wines (see last post). This skin-contact wine is produced on a ânature inspiredâ farm in the Hood River Valley, OR. No mowing or tilling, 85% less sprays than most biodynamic farms - using mostly cinnamon oil and teas to promote a healthy harvest on Savoie-like terroir. // âThe âAuraâ is made by placing pinot gris in the bottom of the fermenter and gently crushing it by foot, and then pinot noir is placed whole cluster on top of it. They spent 8 days macerating before being pressed into neutral barrels where they age for 18 months. The wine is salmon in color but dense and powerful, with aromas of reductive smoke, meat and spice, orange rind and mineral. Biodynamically grown, low-intervention.â //
