Difficult for many, but @sixsensesrome makes it easy. In the subterranean spa, a Roman bathing circuit recreates an ancient wellbeing practice with three plunge pools—tepidarium, caldarium, and frigidarium—in a combination that reduces inflammation, relieves sore muscles, and boosts mood. We emerged overflowing with joy. An espresso sipped slowly on the suite balcony invites calm contemplation while taking in the sounds and sprawl of Rome. Later, at Bivium restaurant, there’s ample time to savor the textures and verdant flavors of an assortment of vegetables that have been blended, roasted, pickled, and presented as art on the plate.

If more people were like Lien Ta, the world would be a better place. She’s a rare thing in this city—a mix of glamor and empathy, changing the industry one non-profit startup at a time. Her enigmatically named restaurants—diner-done-good All Day Baby; cross-cultural fun factory Here’s Looking At You—brought a sense of community to this sprawling city. Then, in 2020, she started RE: Her, a groundbreaking collective for women working in hospitality.   “Our initial thinking with creating RE: Her was: ‘Let’s get the ladies in hospitality banded together’,” she says. “So that we can amplify what we’re doing and really help drive business to these places. “Gather the girls. Have fun. Plan parties. But also raise awareness to brands that have deeper pockets, and get that money out to the women that need it most.”

In 2024, The Benjamin strutted into Hollywood. It’s a success story worthy of the silver screen, its timelessly cool classic-meets-modern vibe instantly capturing the imagination of locals and critics. Its bar space is already an LA icon, already one of the places to sip and be seen. Co-partner Kate Burr, and executive chef Hannah Martin-Duarte, are clear on their goals, talents and getting the job done, but with a sense of irreverence and fun. And they know what makes the perfect cocktail. “The bar program has become a big piece of what we do,” says Burr. “Some would say drinking culture has shifted, but our demographic loves a drink. Especially a martini.” Asked what advice she’d give to young women starting out in the industry, Martin-Duarte’s answer sums it up perfectly: “Give ‘em hell.”

Fahara Zamorano is the ultimate dinner party guest. She’s one of few people this side of Burgundy who can talk wine without pretension, her passion and encyclopedic knowledge bursting forth like red berries from a Romanée-Conti. She’s also one of the most significant sommeliers in Los Angeles, curating the cellar at Dominique Crenn’s LA iteration of Parisian icon Monsieur Dior. “You kinda have to be a nerd,” she laughs, when quizzed on the skills that enable her to every innovation from Crenn’s kitchen with the perfect bottle. “You have to know geography, you have to know history, you have to know science, chemistry—you have to remember weather patterns for years in different regions. “In order to do it, you have to be really into it. You have to enjoy it. Most people I know that work in wine, it’s because it’s a passion. It’s not just your job. You don’t clock out.”

“I still feel like I have so much to learn. And maybe that’s why I’m still working. Maybe that’s why I haven’t retired. Because I’m not done yet.” Nancy Silverton’s restaurants, including Campanile, Pizzeria Mozza and chi SPACCA, have been part of LA’s DNA for decades. With the opening of La Brea Bakery in 1989, Silverton served something alien in Los Angeles—bread that rose to the occasion. Silverton is a legend, her face etched on a mozzarella-melted Mount Rushmore of the city’s most influential and important chefs. But she’s still not done innovating. “People come to me all the time and say ‘what can you offer in your world that nobody’s ever experienced before?’ You have to constantly be creative and reinvent. It’s fun.”

On a damp Los Angeles morning last month, we found ourselves in a photo studio with five of the sunniest women in the city’s dining scene. As well as being instrumental in transforming LA into a true culinary destination over the last decade or so, this quintet have helped transform it into one of the few cities where women are leading the food and drink scene. So, in Women’s History Month, we’re here to celebrate them and the history they’re making: industry legend and sourdough pioneer, Nancy Silverton; Fahara Zamorano, wine director at Monsieur Dior; Lien Ta, co-founder of collective RE: Her; and Kate Burr and Hannah Martin-Duarte, co-founder and executive chef respectively of hit Hollywood joint The Benjamin. These women are innovators, convention-breakers, envelope-pushers, and—notably, in a cut-throat industry—kind, supportive, collaborative people through and through. “Times have changed. Think outside your gender,” says Silverton. “But make sure you’re getting into a line of work that you’re passionate about. Because it’s the passion that keeps you going.”
