Queen’s Cakes (A South African classic) 🧁
A nostalgic classic made even softer with a little twist.
Ingredients • 2 eggs • ⅓ cup tangy mayonnaise • 1 tablespoon vanilla essence • 1 cup milk • ¾ cup melted margarine • 1 cup icing sugar • ¼ teaspoon salt • 2 cups flour • 4 teaspoons baking powder • 1 cup desiccated coconut
Method 1. Preheat your oven to 200°C and lightly coat your baking pan or cupcake tray with cooking spray oil. 2. In a bowl, add the eggs, mayonnaise, vanilla essence, milk, and melted margarine. Whisk everything together until smooth. 3. Add the icing sugar and salt, then whisk again until well combined. 4. Gradually add the flour, one cup at a time, whisking as you go to avoid lumps. 5. Add the baking powder and mix it in thoroughly. 6. Fold in the desiccated coconut and combine everything until you have a smooth batter. 7. Scoop the batter into your prepared pan, filling each cup evenly. 8. Bake for about 6–10 minutes, or until the cakes are golden brown on the outside. 9. Remove from the oven, allow to cool slightly, and enjoy.

Biscoff Peppermint Crisp Popcorn 🍿
A sweet, crunchy snack with caramel notes from Lotus Biscoff and minty chocolate from Peppermint Crisp.
Ingredients • ⅓ cup popcorn kernels • ¾ to 1 cup crunchy Lotus Biscoff spread • 1 teaspoon margarine • ¾ of a Peppermint Crisp bar, crushed • Remaining ¼ Peppermint Crisp bar, crushed, for garnish
Method 1. Pop the popcorn kernels and place the popcorn in a large mixing bowl. 2. Warm the Lotus Biscoff spread with the margarine in the microwave for about 30 seconds, until loosened and pourable. 3. Drizzle the warm spread over the popcorn and gently fold until evenly coated. 4. Add three quarters of the crushed Peppermint Crisp and gently toss to combine. 5. Spread the coated popcorn onto a lined baking tray in an even layer. 6. Chill in the fridge for 10 to 15 minutes to set. 7. Serve garnished with the remaining crushed Peppermint Crisp.
Note
Use ¾ cup for a lighter coating or 1 cup for a richer, more indulgent finish.

A comforting roast where the chicken and vegetables cook together, soaking up every bit of flavour.
For the marinade, I blended Six Gun seasoning, garlic powder, ginger powder, curry powder, mustard powder, a little salt, soy sauce, margarine, homemade sweet chili, pickled Peppadew juice, and a little cooking oil until smooth.
I coated the potatoes and pumpkin in the marinade first, then used the rest to generously cover a whole chicken. Into a roasting pan went the vegetables first, with the chicken laid over them so everything could roast together and the juices could drip down into the vegetables.
With the last of the marinade, I mixed in sliced onions, then rinsed the marinade cup with a little more pickled Peppadew juice to catch every bit of flavour and poured that over the tray. Finished with fresh rosemary on top.
Roast at 160°C for about 1 hour to 1 hour 15 minutes, until the chicken is golden and cooked through, and the vegetables are tender and caramelised. Serve straight from the pan with all those roasting juices spooned over.
