It's been incredible being able to see Matt grow and develop into the powerhouse talent that he is.
From slinging burgers and frying fries to opening Gia, a plant based restaurant where we had one of the best meals we've had in ages (take out too!)
Matt now heads up the team @new_school_foods where he's passionately bringing the only plant based salmon filet into he market. Unreal.
His skill is real, his dedication to his craft is next to none and now that he is a father we'll all be blessed to see that love and passion passed on to the next generation.
We’re proud to share this Deep Cuts film, made with our friends at Not Work Collective, spotlighting Matt and the work he’s poured himself into.

Dennis Tay is one of those chefs every young cook should look up to. His passion, discipline, and attention to detail are second to none, and it’s exactly what we admire most at KNIFE.
From his #filipinoquarantino series during lockdown to his work today at DaiLo, Dennis has always inspired us. He’s a reminder that our shop has never just been about knives. It’s about food, and about the people who make it worth celebrating.
We’re proud to share this Deep Cuts film, created with our friend Max Rosenstein and the Not Work Collective, spotlighting Dennis and his craft.
Stay tuned for more Deep Cuts.
